Take-out Tuesday, Chicken Parmigiana Rolls

I am a huge believer in cooking chicken in a slow cooker, whether to put into a casserole, or for a complete meal. I have seen recipes for Chicken Parmigiana in the slow cooker floating around and decided to give it a whirl~ my main inspiration came from Plain Chicken, her method is so easy, I had to give it a try~


I used boneless chicken thighs, Basil and Tomato Sauce, minced onion, garlic and Italian seasoning


This is one of those embarrassingly easy recipes, but hey, who doesn’t need easy sometimes~


Pour the sauce over the seasoned chicken, cover and go scuba diving or something


Cook on low for 6-8 hours, and when you come back all you have to do is toast some buns and serve it up


I used small crusty rolls, and spread them with butter and garlic seasoning and toasted them


Place a piece of chicken, or shred the chicken if you prefer, on the toasted bun and top with with a generous amount of shaved Parmesan


This tastes really good after a long busy day~

Chicken Parmigiana

  • Servings: 6-8
  • Difficulty: easy

6 boneless chicken thighs

1 24 oz. jar prepared Marinara sauce or 3 cups

1-2 tsp minced garlic

1-2 tsp minced onion

Italian seasoning

6-8 small buns


garlic seasoning

4-6 oz. shaved Parmesan

Spray or line slow cooker.  Add chicken and season.  Pour sauce over, cover and cook on low for 6-8 hours.  Toast buns spread with butter and garlic seasoning.  Serve chicken in buns topped with shaved Parmesan cheese.
