Recipe Box, Queso Pizza with Bacon and Corn

I have been on a flatbread, open face, tartine, pizza kind of kick lately…
Unexpected combinations piled high on a crust
Great straight from the oven or reheated the next day, a flatbread, open face, tartine, pizza type dish is a great way to get your veggies, protein, and carbs all in one delicious bite
I started out by baking my crust~my current favorite is Pillsbury thin crust pizza crust refrigerated dough~
Smearing it with a head of roasted garlic and then spreading with a thin layer of Queso cheese sauce or dip
Then I topped it with cooked fresh corn {white and yellow} cut from the cob and green onions
and bacon, roasted in the oven and cut into 1 inch pieces
So simple, but different enough to be exciting!
It’s kinda fun if you can cut the corn so it stays together in larger pieces
This Queso pizza would be outstanding with sausage or chorizo too~

Queso Pizza with Bacon & Corn
Ingredients
- 1 pizza crust or flatbread cooked, such as Pillsbury Thin Crust refrigerated pizza dough
- 1 cup prepared Queso cheese dip I used Costco brand
- 1 head garlic roasted*
- 4-5 green onions sliced
- 8 slices bacon cooked**
- 3 ears fresh corn cooked***
Instructions
- Spread roasted garlic on cooked pizza crust.
- Top with an even layer of Queso cheese dip
- Top with corn, bacon and green onions.
- Bake at 400 for 10-12 minutes until golden and hot. Cut into 8 large squares or smaller squares for appetizers to serve.

I have a biscuit recipe (freezer biscuits) that my aunt gave to me years ago. I like to grab one from the freezer, let it thaw, press it flat and make a quick little personal sized pizza. I’ll have to try one with this sauce and the toppings that you’ve shared.

Lip smackin’! I love how you cut the corn sections. Think I’ll try that pizza dough you mentioned. I still can’t get into doing it from scratch. I love seeing what you put together…looks like a delicious combo to me!
