Take-out Tuesday, Slow Cooker Brown Butter Mashed Potatoes

This recipe has it all, 5 minute prep, 1 pot start to finish, easy peasy good!

Simply cut your potatoes into pieces {1/4s or 1/8s depending on size}, no need to peel

Toss them in a cooking oil sprayed slow cooker and top with butter, onion soup seasoning and add water

Cover and go on your merry way~  💃

Now you can eat them just like this, soft and buttery with brown edges and onion flavor

or you can add a little milk and sour cream and give them a quick mash with an immersion blender or hand mixer right there in the slow cooker

Mix lightly, keeping some lumps for interest and texture- overmixing can make them pasty

I mentioned that next time I might try seasoning with herbs such as rosemary and got a resounding “No! Don’t change a thing!” from HHjr…

He’s not one to rave, so I considered that a big success  👍

Slow Cooker Brown Butter Mashed Potatoes

  • Servings: 3-4
  • Difficulty: easy

adapted from Carlsbad Cravings

12-16 red potatoes,* washed but not peeled

3 T real unsalted butter

3-4 T dry onion soup mix

1/3 cup water

1/4 -1/2 cup milk

1/3 cup sour cream

salt and pepper to taste

Cut potatoes into 1/4s or 1/8s depending on size of potatoes. Place into a cooking oil sprayed slow cooker.  Add onion soup seasoning, salt, pepper,  and butter.  Pour in water.  Cover and cook on low for 7-8 hours or on high 3-4 hours.  30 minutes before serving add the sour cream and 1/4 cup milk.  Blend lightly with an immersion blender or hand mixer.  Add more milk if desired.  Taste and adjust seasonings.  Cover and heat through before serving.  Makes 3-4 servings
