Recipe Box, BBQ Pork “Cupcakes” with Coleslaw “Icing” and Crispy Onions

This little bite is bound to spark up your next gathering!
Who can resist a little puff pastry filled with BBQ pork, topped with creamy slaw and crispy onions?
You can assemble them for serving, or set them out with bowls of slaw and onions and let people make their own
Great for parties, game day or just nibbling
Cut puff pastry into small squares, about 8 squares per each 1/3 sheet
Place squares into a silicone mini muffin mold {if you use silicone you don’t have to line or spray it}
Top with cooked pulled pork and drizzle liberally with BBQ sauce
They will pop right out of the silicone pan, ready for “icing!”
They are sort of an eye roller…as in OMG, where have these been all my life?

BBQ Cupcakes with Coleslaw Icing and Crispy Onions
Ingredients
- Adjust ingredients according to desired number of cupcakes
- 1/3 sheet of puff pastry will make 8 mini cupcakes
- cooked pulled pork or shredded meat
- BBQ sauce
- Coleslaw mix
- Bleu cheese dressing coleslaw dressing, or dressing of choice
- Crispy onions*
Instructions
- Mix coleslaw with dressing to taste and refrigerate for several hours to soften and combine flavors.
- Cut thawed puff pastry into small squares, about 8 squares per 1/3 sheet.
- Place in a silicone mini muffin pan or a sprayed or greased mini muffin pan.
- Top each square with a heaping portion of cooked shredded pork or beef. Drizzle liberally with a thick BBQ sauce.
- Bake at 400 for 15-20 minutes until pastry is done. Carefully remove from pan. Serve with slaw and crispy onions, or assemble cupcakes and arrange on a platter. Serve warm or at room temperature.
*I recommend Fresh Gourmet Crispy Onions which taste great right out of the bag without heating. Look for them near the croutons and salad dressing

We did enjoy a BBQ pork butt for dinner and then used the leftovers for these cupcakes several days later, with commerical BBQ sauce, bottled bleu cheese dressing, and the Fresh Gourmet Onions

I haven’t had pulled pork in a long time, sounds good:@)
This is right up our alley Jenna! We have pulled pork in the freezer from the Big Green Egg and this the way we like to graze while watching a ball game or tree trimming. I’m still trying to get our tree decorated and bins put away with four dogs underfoot, I think I need a cupcake 🙂
