Holidays, Fry-Tot-To for Cinco de Mayo!

Are you gearing up for a Cinco de Mayo Fiesta?

HH & I had a little celebration earlier this week so I could share this fun “Fry-Tot-To” recipe

Just in time for Cinco de Mayo  🎉

We were celebrating a picture perfect day on the coast after a severe squall pounded the area a few days before

This poor little bromelaid was almost blown out of it’s pot!

We didn’t have any damage, but Mother Nature had fun rearranging the furniture  💨

You can make the Roasted Corn & Sausage Queso and serve it over potatoes on a sheet pan, or as a dip with potato dippers

But I had a different presentation in mind

Bake the potatoes first and while the potatoes are cooking, throw the queso together, it’s easy peasy

I roasted the corn earlier in the day and cut it off the cob, or you can use leftover grilled corn, canned or frozen corn

Brown the sausage, drain on paper towels, and pour off grease, leaving just a little to brown the garlic

After garlic browns, 1 minute or so, add cream and cream cheese to skillet and stir to melt

Add cheddar

In minutes you will have a creamy dreamy queso

Season to taste with taco seasoning, chili pepper, cayenne pepper, cumin, whatever you prefer

Add sausage, corn back to skillet and jalapênos or green chilies if that’s the way you roll  🌶

Top your cooked potatoes with the corn and sausage queso and return to a 350-400 oven for 15 minutes to heat through

Garnish with corn, scallions and avocado, chopped tomatoes, jalapênos or whatever you desire

This is messy so you will need plates and flatware
Other serving options:
  1. Serve queso in a baking dish with potatoes for dipping
     2. Pour queso over potatoes on sheet pan, garnish and serve with pan wrapped in   a large pretty towel
*to roast corn:
husk corn and place in oil sprayed pan, cover and bake at 400 for 45 minutes
Keyword Cinco de Mayo, Mexican dip, sausage queso, tater tots and french fries, Tex-Mex party dip

We enjoyed salsa and chips with our Fry-Tot-To also

You can spice this dish up as much as you like

We also had refreshing faux margaritas, ice water filled margarita glasses with double lime

Spice things up a little this weekend!

  1. That looks yummy! – And your view looks so relaxing! How I would love to live by the water.

  2. Well, I’m on no-fry during recovery so we’ll have to punt on this one. But it looks so delish!

  3. We had our little fiesta last night so I could write it up too which I haven’t done yet. Beautiful table and weather for yours Jenna. My sons would LOVE your dip! Happy Cinco!

  4. You really spiced it up, and I fully intend to do likewise this weekend! Not as colorfully as you did, but the tequila will probably have me seeing colors later! 😆 I’m glad you didn’t suffer any substantial damage during the storm. Mother Nature has been on a real rant lately!

  5. Jodi says:

How fun and yummy is this?!! Especially with a margarita! Woohoo!

  6. Leslie Anne Tarabella says:

Why do I love tater-tots so? I’ve been dreaming of Mexican food all week and don’t know if I can wait until 5/5 to indulge. I’m thinking if I eat tacos today, I’ll beat the crowd. Throwing tots into the mix . . . well, that may settle it!

  7. That is one appetizing table! Lovely view, pretty table and great food!

  8. Ann Krucek says:

At his recipe looks like one my husband would love!!! Love the table, everything looks very festive.
I had hoped to do some tables outside, but our weather has not been very cooperative either.

Terrific table setting for your early celebration and the food looks delish! I also like your faux margaritas – good idea to use the “right” glasses but use water with some garnish – much healthier!

  12. Happy Cinco de Mayo Jenna! Have fun:@)
