Holidays, Fry-Tot-To for Cinco de Mayo!

Are you gearing up for a Cinco de Mayo Fiesta?
HH & I had a little celebration earlier this week so I could share this fun “Fry-Tot-To” recipe
Just in time for Cinco de Mayo 🎉
We were celebrating a picture perfect day on the coast after a severe squall pounded the area a few days before
This poor little bromelaid was almost blown out of it’s pot!
We didn’t have any damage, but Mother Nature had fun rearranging the furniture 💨
You can make the Roasted Corn & Sausage Queso and serve it over potatoes on a sheet pan, or as a dip with potato dippers
But I had a different presentation in mind
Bake the potatoes first and while the potatoes are cooking, throw the queso together, it’s easy peasy
I roasted the corn earlier in the day and cut it off the cob, or you can use leftover grilled corn, canned or frozen corn
Brown the sausage, drain on paper towels, and pour off grease, leaving just a little to brown the garlic
After garlic browns, 1 minute or so, add cream and cream cheese to skillet and stir to melt
Add cheddar
In minutes you will have a creamy dreamy queso
Season to taste with taco seasoning, chili pepper, cayenne pepper, cumin, whatever you prefer
Add sausage, corn back to skillet and jalapênos or green chilies if that’s the way you roll 🌶
Top your cooked potatoes with the corn and sausage queso and return to a 350-400 oven for 15 minutes to heat through
Garnish with corn, scallions and avocado, chopped tomatoes, jalapênos or whatever you desire

Fry-Tot-To with Roasted Corn and Sausage Queso
Ingredients
- adjust amounts according to how many you are serving
Fry-Tot-To
- frozen Tater Tots
- frozen Krinkle cut fries
- 2-4 ears corn roasted*
- Sausage Queso*
Sausage Queso
- 8 oz hot sausage or chorizo
- 1 1/2 cups half and half
- 4 oz cream cheese
- 8 oz extra sharp cheddar grated
- seasoning to taste: taco seasoning cayenne pepper, chili powder, cumin
Garnishes
- scallions chopped
- shredded lettuce
- chopped tomatoes
- avocado diced
- black beans
- jalapeno slices
Instructions
Sausage Queso
- Brown sausage, remove from pan and drain on paper towels.
- Pour off all but 1 tsp of grease and quickly saute garlic.
- Add half and half and cream cheese to pan.
- Stir in cheddar and heat over medium low heat until melted. Taste. Adjust seasonings to preference.
- Add sausage and corn back to pan and stir.
Fry Tot-To
- Bake tater tots and fries on a sheet pan according to package directions. Sprinkle with salt.
- Spray a shallow baking dish with cooking spray and layer tots evenly on the bottom.
- Stand fries up around the edges.
- Top with a layer of queso, reserving extra queso for another time if it’s more than you need.
- Bake at 350-400 degrees for 15 minutes to heat through. Add toppings of choice and serve.

- Serve queso in a baking dish with potatoes for dipping
We enjoyed salsa and chips with our Fry-Tot-To also
You can spice this dish up as much as you like
We also had refreshing faux margaritas, ice water filled margarita glasses with double lime
Spice things up a little this weekend!

You really spiced it up, and I fully intend to do likewise this weekend! Not as colorfully as you did, but the tequila will probably have me seeing colors later! 😆 I’m glad you didn’t suffer any substantial damage during the storm. Mother Nature has been on a real rant lately!

Why do I love tater-tots so? I’ve been dreaming of Mexican food all week and don’t know if I can wait until 5/5 to indulge. I’m thinking if I eat tacos today, I’ll beat the crowd. Throwing tots into the mix . . . well, that may settle it!

Terrific table setting for your early celebration and the food looks delish! I also like your faux margaritas – good idea to use the “right” glasses but use water with some garnish – much healthier!
