Recipe Box, Club Sandwich Lasagna

Okay, sooooo…

Do you ever get an idea for a dish that you are quite sure is going to be beyond amazing?

You think, “this is such a brilliant idea!” 💡

And you strut

And feel all proud of yourself

Maybe show off a bit

And you brag about what a fabulously delicious dinner you are making!

You bask in the sunlight of compliments and praise you are sure to receive…

AND THEN

You laugh  🤣

And scratch your head, what was I thinking…

You return to humble…

After all, it’s just a simple casserole of leftovers…

But for a minute there, you were really flying!

Soooo…

This recipe might not be your claim to fame,

But it beats a cold sandwich of leftovers on a Thursday night!

Club Sandwich Lasagna

Prep Time 20 minutes
Cook Time 40 minutes
Course Main Course
Cuisine American
Servings 3

Ingredients
  

  • 6 lasagna noodles
  • 4 slices deli Ham chopped
  • 4 slices deli Smoked turkey chopped
  • 6 slices crispy Bacon cut into pieces
  • 2-3 Green onions chopped
  • Sliced grape tomatoes or tomatoes
  • 2 oz Parmesan grated
  • 2 oz Manchango Gruyere or White cheddar, grated
  • 1 jar 15 oz. light Alfredo sauce

Instructions
 

  • Boil noodles until al dente
  • Spray baking dish. Spread 1/4 of sauce in dish and layer in 2 noodles.
  • Sprinkle with 1/2 meats and 1/3 of cheeses.
  • Sprinkle with 1/2 tomatoes and green onions. Top with 1/4 of sauce. Repeat.
  • Place last 2 noodles on top and cover with remaining sauce and cheese. Can be refrigerated at this point until baking.
  • Bake at 350 for 30-40 minutes until hot and bubbling. Let set 5-10 minutes for easier serving.

    • This silly bird just fascinates me, he is so funny! I’ve got to get a video of him playing, he will poke at a leaf or stick, pick it up, spit it out and then do a kooky dance, spin around, and start all over again!
