Recipe Box, Semi-Homemade Chicken Cordon Bleu with Zoodles & Pasta

Are grocery stores in your area offering more and more items that make fixing dinner easier?
Many stores now have a whole section of spirialized vegetables in the produce section
In the butcher department I’ve seen complete dinner kits, with everything you need prepped, plus a recipe, are boxed and ready to take home
Also in the meat or deli departments, there many ready to cook choices such as stuffed chicken breasts, beef kebabs, meatballs, stuffed hamburgers, twice baked potatoes, salads, sandwiches, side dishes, all kind of temptations!
Yes, these things can be a little more expensive, but sometimes it’s nice to treat yourself to some help in the kitchen
I recently visited a local Fresh Market store and see what I could find. I do have a spirializer, but couldn’t resist picking up some spirialized zucchini and squash
The butcher display had so many choices, but my eyes kept going back to the Chicken Cordon Bleu, chicken breasts rolled up with ham and cheese
I simply added some more bread crumbs from my pantry and popped them in the oven
In the deli section I grabbed a container of fresh Alfredo sauce, and pumpkin ravioli
This simple supper was going to be pretty elegant!
Close to the end of the chicken cooking time, put the pasta in a saucepan of salted boiling water and cook according to package directions. Drain and return to hot pan and cover until zucchini is done
Sautee the zucchini noodles in a skillet with a little olive oil
The “zoodles” only need a quick 3-5 minute saute, and then remove pan from heat when zucchini is tender crisp. If you overcook it, it will be a mushy mess, and do not add salt, that will make it break down
When the zucchini is done add the ravioli
Heat the Alfredo sauce in a small sauce pan or microwave and drizzle over pasta and zucchini in pan
Serve chicken breast atop of cooked zucchini and pasta, and drizzle additional sauce over all
These chicken breasts were so big I cut some in half for smaller servings

Semi-homemade Chicken Cordon Bleu over Zoodles & Pasta
Ingredients
- 2 raw stuffed chicken breasts like Chicken Cordon Bleu or frozen stuffed chicken
- bread crumbs optional
- 3-4 cups spirialized zucchini
- 12-16 frozen ravioli such as pumpkin, cheese, or spinach
- 1 Tablespoon olive oil
- 1 cup fresh or jarred Alfredo sauce
Instructions
- Bake chicken according to package directions, adding additional bread crumbs if desired. When chicken is almost done, boil the pasta until al dente and drain and keep warm.
- Saute zucchini in a skillet with the olive oil for 3-5 minutes over medium heat until crisp tender. Add ravioli. Heat Alfredo sauce and pour 1/4-1/2 cup over noodles and ravioli.
- Spoon noodles and ravioli onto dinner plates and top with a baked chicken breast. If breasts are large, cut in half. Drizzle chicken with additional Alfredo sauce and serve. If you have left over sauce, save it for another use. Makes 2-4 servings
Note: If you cook the chicken on a piece of foil, you will have very little clean up
It’s always nice to have a little help with dinner!

Next time you come to Bham and Trader Joe’s, hit Fresh Market, there’s one at Brookwood Village and one about 1 mile from the Summit down 280 toward Chelsea. They have all kinds of wonderful stuff!
Lovely! And I’ve noticed the same. Our Aldi even has things like spiralized butternut squash! Handy helpers!!

This looks very elegant. I’ll have to check the Aldi for spiralized things as Jodi said above. We don’t have Fresh Market but I wonder if Kroger carries it? No matter — I can find some. Sometimes having store-helpers is a great godsend!

What a meal, Jenna! I made some zucchini “noodles” just the other day with my hand held spiralizer. They were so tasty with my sauteed shrimp. Easy is good! I’ve never seen the already prepared zoodles.
I’ve seen them at Publix and Fresh Market, I bet one of your stores will start carrying them soon because spiralized vegetables are becoming so popular. Your combo sounds delicious!
Great meal, easy and quick. Sometimes I really enjoy creating an easy dinner. I have a spiralizer, it works like a charm. Anything that speeds up the process is wonderful.

Oh my mouth is watering over everything you prepared! The chicken looks fabulous. I have seen that in the deli section but never tried it. I would love to try the spiralized veggies too. Makes me want to run to the store right now.

That looks so delicious! I have never seen prepared meats like this at our market but I did almost pick up a pack of the spiralized zucchini this week.
You can always use frozen Chicken Cordon Bleu, it’s pretty good!
