Recipe Box, Brussels Parmesan & Tempura Fried Okra

I am an avid fan of Brussels sprouts, but if you’re not you might change your mind when you pop a tasty Parmesan crusted fried sprout in your mouth!
I am NOT a fan of okra, which is practically a Southern staple, but these light and crispy okra pods are hard to resist
We had a few Brussels sprouts in the refrigerator and our neighbor brought over some fresh okra from his garden so HHjr and I had a little “fry off” competition to see whose version was better
They were both a big hit!
For the sprouts, I made a dipping assembly line, with a bowl of flour, a bowl of beaten eggs, and a bowl of Panko Parmesan mixed
Dredge trimmed and halved sprouts in flour, dip in eggs, then roll in breadcrumb/cheese mixture
It was lots of fun, I made a huge mess 😳
You can prep these in advance and put them in the refrigerator until frying if you like
When ready to cook, fry them in a deep pan or fryer in hot {400 degrees} oil for 3-4 minutes
Drain and serve with a creamy dipping sauce, like blue cheese or ranch dressing, mayonnaise, aioli, or just eat them plain

Brussels Parmesan
Ingredients
- 1/2 cup Panko breadcrumbs
- 1/2 cup freshly grated Parmesan
- 14-16 Brussels sprouts*
- 1/2 cup all-purpose flour
- 2 large eggs beaten
- salt & pepper
- oil for frying
Instructions
- Heat oil in fryer or deep sauce pan.
- Trim off ends of sprouts and cut in 1/2.
- Fill 1 bowl with flour, combine Panko and Parmesan in another bowl, and beat eggs in a third bowl and season eggs with salt & pepper.
- Dip each Brussels sprout half into flour, then egg, then breadcrumb Parmesan mixture.
- Working in small batches, drop sprouts into hot oil and cook for 3-4 minutes.
- Remove from oil and drain on paper towels.
- Keep warm in a 200 degree oven until all sprouts are fried.
- Serve with a creamy ranch, Italian or blue cheese dressing for dipping.
Notes
You can use a boxed Tempura batter mix for the okra
Or you can make your own with just 3 ingredients

Tempura Fried Okra
Ingredients
- fresh okra pods
- 1 egg white
- 1/2 cup flour
- 1/3 cup ice water or beer
- salt & pepper
Instructions
- Combine egg white with flour and liquid.
- Season well with salt and pepper.
- Add okra and stir to coat.
- Place battered okra into hot oil in batches.
- Cook for 2-3 minutes until golden.
- Drain on paper towels and keep warm in a 200 degree oven until ready to eat.

Happy frying, Jenna! I have never been a big fan of Brussels sprouts, but I know I would like these. Now fried okra is always good. Both recipes look fabulous. How fun to cook with HHjr!

Jenna, I am just like you….I love brussel sprouts, but I’m not too crazy about okra. Around here, during the summertime okra is in abundance. My family loves it fried in cornmeal. I’m going to try your recipe, and I can’t wait to try the brussel sprout one! Happy Sunday!!!

Oh, my word! If I weren’t on a weight loss journey right now, I’d be ALL OVER these bad boys!!! I don’t generally care for Brussels sprouts and I only casually care for okra, but deep fried like this…I could easily change my tune!!!
