Peel, core and chop the apples into 1/2 inch pieces. Melt butter in medium sauce pan over medium heat. Add brown sugar and stir to melt. Add apples, stir and cover pan. Let apples cook for 5 minutes. Apples should be soft {or continue cooking until they are} and then add flour. Stir flour into apples until it disappears and filling thickens. Remove from heat and let cool.
Bars
1/2 cup {8 T or 1 stick} unsalted butter
1 egg, room temperature
1 cup light brown sugar
1 tsp vanilla extract
1 cup all purpose flour
1/2 tsp baking powder
1 tsp apple pie spice
salted caramel sauce
whipped cream
Preheat oven to 350 degrees. Generously grease or spray a small baking dish, 8″ x 8″ or I used a 9″ x 6″ rectangle.
Melt butter in a large mixing bowl. Add sugar and whisk to combine. Add egg and whisk to thoroughly. Add vanilla, baking powder, apple pie spice and flour. Stir well. Stir in the cooled apple filling. Pour batter into prepared dish and spread into an even layer. Bake for 20-25 minutes until just set. Let cool thoroughly before cutting into bars. Makes about 18 bars or squares.
To serve, top each bar with a generous spoonful of salted caramel sauce and a dollop of whipped cream
