Take-out Tuesday, BBQ Chicken Tacos with Broccoli Pineapple Slaw

I have been using Shipt grocery delivery at the beach house
even before Covid 19 because it is so convenient
I wanted to make something easy for the boys supper time arrival last Thursday,
they love tacos, they love BBQ, they love pineapple…
BBQ chicken in the slow cooker would be perfect for a taco dinner!
I decided to make BBQ Chicken tacos topped with a fruit filled slaw
Put the chicken into a sprayed slow cooker and cover with BBQ sauce
Cook on high 3-4 hours {low 6-8}
Your chicken will be so tender you can shred it with 2 forks
I wanted to make Pineapple Coleslaw from Happier Than a Pig in Mud
But when my shopper text me that the coleslaw mix on my list wasn’t available,
she suggested broccoli slaw
Hmmm…. that would actually be even better!
I could make a variation of one of our favorites
This slaw starts with Broccoli Slaw mix in a bag
and gets the irresistible addition of fresh pineapple,
red grapes, bacon and cheese
I dressed the slaw with a dash of rice vinegar and seasoned it with salt & pepper
Then I decided to add just a touch of honey mustard to bind it together
With all the goodies this slaw has in it, even picky eaters won’t notice the broccoli!
I lightly fried flour tortillas in a scant about of olive oil and butter
to use as the taco shell
This meal is also super easy because everyone can help themselves
and build their own taco
Pile shredded BBQ chicken on a tortilla
Top with slaw
Fold it over and dinner is ready!

BBQ Chicken Tacos with Broccoli Pineapple Slaw
Ingredients
BBQ Chicken Tacos
- 6 boneless skinless chicken thighs or 3 boneless chicken breasts
- BBQ sauce
- flour tortillas 1-2 per person
- olive oil
- salt and pepper
Broccoli Pineapple Slaw
- 12 oz Broccoli Slaw mix bagged in salad section
- 2 cups ` red grapes, washed and cut in half
- 4 slices thick bacon, cooked until crisp, cut in 1 inch pieces
- 6 chunks fresh pineapple, cut into smaller pieces
- 2 oz grated sharp cheddar
- 1 dash rice vinegar
- salt and pepper to tast
- honey mustard dressing, optional
Instructions
Slow Cooker BBQ Chicken
- Spray or line a slow cooker, add chicken and season with salt and pepper
- Cover with your choice of BBQ sauce
- Cook on high for 3-4 hours or low for 6-8 hours
- Shred chicken with 2 forks and toss with additional BBQ sauce if desired
Broccoli Slaw
- Mix broccoli slaw with grapes, pineapple, bacon and cheese
- Season with salt & pepper and a dash of rice vinegar
- Toss with a little honey mustard dressing to bind together if desired
- Salad can be made up to 48 hours in advance
Assembling Tacos
- Saute tortillas in butter and olive oil until golden on one side, then flip and cook the other side
- Drain on paper towels
- Add a heaping portion of BBQ chicken down the center of tortilla and top with slaw
- Fold over and plate

A new summer favorite, it was gobbled up! I got a video from my son yesterday of the sheets of rain coming off our roof, wow! The weather has been really nice here, hot but breezy, hope it holds through the 4th!

I love tacos. I like to put cabbage in mine, but the broccoli slaw looks like it can make a good substitute. Does it hold up to the heat from the chicken? I use online grocery orders and parking lot pickup. They make substitutes, but I don’t get a call. I can approve or reject the substitutes online before I pick up my order. – Margy
yes, the broccoli slaw does hold up well, and is also good for several days in the fridge. I’ve never tried curb side pick up, that’s great that they do subs for you. Shipt has really spoiled me, right to my door and the shoppers text constantly to check on substitutions, and the ones I’ve had lately have done really good jobs! Thanks Margy!
