The Organized Life, October Paint Bucket

My monthly “Paint Bucket” is a list of recipes to refer to for cooking ideas and inspirations for the upcoming month. It is my way of organizing my meals and menus by choosing 16-18 recipes that are seasonal and appetizing, thus saving a lot of time endlessly browsing through Pinterest boards and saved recipes all month long
I also think it’s fun to have a theme or Flavor of the Month and choose recipes that either have the ingredient or go with the theme
The theme for October is,
you guessed it,
Pumpkin!

If you don’t like Pumpkin,
don’t worry, there are plenty of other tasty recipes too!

The flavor of the month was Rainbow Vegetable

Broccoli Bacon Salad with Toasted Pumpkin Seeds
from Haphazard Homemaker was the inspiration for
Rainbow Roasted Vegetable Galette

I also made a new version of one of my favorite galettes,
this one is full of fresh corn and zucchini

Zucchini Enchilada Roll-ups from Closet Cooking was the inspiration for
this super easy Tex-Mex Chicken Corn & Black Bean Lasagna,

HHjr shared his recipe and technique
for Mongolian Beef with Vegetable Stir Fried Rice

I didn’t have a chance to make this,
but don’t be surprised if you see it in the next few weeks
Almond Amaretto Pound Cake from Dixie Crystals and The Novice Chef
In the meantime, Fall is the perfect time to enjoy
Million Dollar Pound Cake with Toffee Almond Crown

My crew loves Chex Mix, and I was going to make Caramel Nut Snack Mix
from Butter with a Side of Bread
But it sounded very sweet,
so I made my more traditional salty mix
adding sesame sticks, pumpkin seeds
and peanut M & Ms for just a touch of sweet
