Recipe Box, Slow Cooker Triple Cheese Scalloped Potatoes

The other night HHjr was cooking steak bites {recipe below}
I offered to do potatoes and a salad
and got out my trusty slow cooker to help…

These potatoes are not only an easy side dish for any night of the week,
but are also perfect for solving the holiday challenge
of getting all your food cooked and ready at the same time…
Using a slow cooker keeps the oven free for other dishes,
like your Thanksgiving turkey or Christmas ham!

Prep is easy peasy, slice russet potatoes,
mix sour cream and condensed cheddar cheese soup, grate cheese
and into the pot it goes!

You can use russet potatoes or red potatoes,
you will need 3-4 red potatoes for each large russet potato
This recipe does not require a mandolin or bleeding knuckles,
just slice the potatoes thinly
Mix sour cream and soup
and season with a dash of Worcestershire,
seasoned salt and fresh black pepper

Grate the cheese~
I used Trader Joe’s Unexpected Cheddar
which is basically a sharp white cheddar mixed with Parmesan
So you can make your own combo with white cheddar and Parmesan
or substitute any flavorful cheese you wish

Now all that’s left to do is layer the ingredients in the slow cooker

Spray your slow cooker well with cooking oil spray
or use a liner for easy clean up
Start with about 1/3 of the potatoes
and place them in an even layer in the bottom of the pot

Spread top with 1/3 of the cheese sauce and sprinkle with 1/3 of the cheese

Repeat layers, and for the last layer,
top the potatoes with the grated cheese first,
then spread the remaining cheese sauce over all

Cover the pot and set it to low
In 7-8 hours you will have a pot full of lovely potatoes!


Slow Cooker Triple Cheese Scalloped Potatoes
Equipment
- slow cooker
Ingredients
- 3 large russet potatoes, or 9-12 red potatoes
- 1 cup sour cream
- 1 can Cheddar Cheese Soup like Campbell's
- dash Worcestershire sauce
- 6 oz sharp Cheddar cheese, grated
- 2 oz freshly grated Parmesan cheese
- fresh ground black pepper
- seasoned salt
Instructions
- Wash potatoes and cut into thin slices, discarding the ends
- Line or spray slow cooker with cooking oil spray
- Mix sour cream with soup and add a dash of Worcestershire
- Place 1/3 of potato slices in bottom of slow cooker
- Top with 1/3 of sour cream mixture and 1/3 of the cheese and sprinkle with pepper
- Repeat layering 2 times using remaining ingredients and for the last layer, top potatoes first with cheese and end with the soup mixture on top
- Cover and cook on low 7-8 hours

- skewers
Ingredients
- ribeye steak
Instructions
- Cut steak into 2" x 1" pieces
- Marinate in teriyaki or a favorite marinade for 4-24 hours
- Place meat on skewers and grill over medium to medium high heat until done, about 15 minutes, depending on your grill and desired doneness
- serve as an appetizer or main dish
Notes

No one would ever guess these potatoes only took a few minutes to prepare!

Well now, don’t those look delicious?! I just gave away my 2nd, older slow cooker and will use my newer one for my ham, but I bet that would be just as good using the oven. I usually use my sister’s recipe, but this looks really good, Jenna. Thanks, pinned!
