Take-out Tuesday, Cinco de Mayo

My family loves any excuse for a party,
so we tend to celebrate any occasion that comes along…
Saturday we had family and friends {everyone was vaccinated}
over for a Kentucky Derby party on the patio

Red roses in a silver champagne bucket,
floppy hats and simple adult and kid friendly foods set on a buffet
Ham biscuits with Mustard Butter,
Beer Cheese & Sausage Fondue with Frito Scoops, baby carrots and celery
Red grapes, pineapple and watermelon chunks
Grilled Conecuh sausage with crackers and pepper jelly,
Chick Fil-A nuggets
Mini Chocolate Pecan Pies and Mini Red Velvet cupcakes {Fresh Market}

Today it’s time to think about the next holiday coming up tomorrow,
May 5th, Cinco de Mayo!
Here are a few festive dinner ideas
Set up a serve yourself Taco Soup Bar
or a Festive Fajita Bar

Chicken Fajita Salad Bowl is a baked tortilla bowl
full of grilled chicken, sauteed vegetables,
refried black beans, lettuce, tomatoes, cheese
and served with a Creamy Corn Muffin

Prepared queso takes these Queso topped Beef and Black Bean burritos
up to a new level

Spanish Enchiladas are full of ham
instead of the usual ground beef or chicken,
and Manchego cheese gives them a wonderful flavor
Corn and tomatoes with green chiles give them even more flavor

Fiesta Frito Pie has a “frito crust”
filled with taco seasoned ground beef, enchilada sauce
corn, sweet peppers and onion, and cheese
After baking, garnish pie
with chopped lettuce, tomato, avocado and sour cream

BBQ Pork Tacos with Pineapple Salad are tacos with an Asian twist
they are full of pulled BBQ pork
and topped with cashews, fresh pineapple,
cucumber, snow peas and lime crema

Thanks Martha, the weather has been perfect for outdoor entertaining the past few weeks. We have big fans and a patio cover we use when it gets hot and propane heaters when it gets cold, so we can entertain outside most of the year
The watermelon cactus is fabulous! Jenna, your bunch loves to party and you seem to handle it with ease. The Derby party looks wonderful and I love that you will add bought food to the mix. Looks like we are in for a stormy day, stay safe!
Thanks Pam, there are so many good things you can get from the stores these days, it makes entertaining a breeze…and I used a lot of disposable serving pieces for super easy clean up. Wild day yesterday, I hope you didn’t have any damage~
No damage, but lots of rain. I saw photos from all around Birmingham of flooding, hopefully none at your house.
I live in Vestavia and we got 8 inches! But luckily no problems and everybody was home by 3:30, but watching the news and seeing the flooding was incredible…did you see the film clip of the pick up truck pulling a wake boarder down Mt. Brook Pkwy? Wow!

For whatever reason de Mayo reminds me of Fifth of Mayonaise! That taco soup does look delicious but so do the BBQ tacos and the fajita bowl. Yum!
