Party Panache, Fisherboy Cupcakes

With a house full of company I love to spoil them with some homemade snacks and goodies. I saw these cupcakes on Pinterest [from nothingbutcountry.com] and thought they would be perfect for the big Labor Day weekend on the coast. I made red velvet cupcakes with blue buttercream icing. Something about Labor Day makes me feel patriotic, and all red, white and blue.
With all of the guys here this weekend there will be FISHING! Well, there will be TALK of fishing. Hurricane Isaac ruined not only fishing plans but a lot of peoples lives last week so there won’t be fishing for a while. But I am going with that theme for the cupcakes, just so the guys think they are fishing. I call them “fisherboy” cupcakes because seriously, these men act like little boys when it comes to fishing.
Gummy fish [Sharkies], short wood skewers and dental floss make up the fishing poles.
I must admit I got a little lazy and just tied the dental floss to the fish. The proper way would be to use a needle to thread the line through the fish before tying…I just didn’t have the patience for that!!

This recipe uses a box cake mix, but with the addition of pudding and sour cream it tastes really good
Can you believe how red this batter turned out? Wow, I definitely didn’t need any more red coloring
Scoop the batter into paper lined pans* and bake according to directions on cake mix box. Take into consideration size, type of pan and your oven, all these variables make a big difference. Start checking on them early in the baking process, and take them out the second they are done.
*You don’t have to use paper liners with these silicone pans, just give them a spray with cooking oil spray. I had these sea blue papers and just wanted to use the with my cupcakes for presentation purposes.
They’re still RED! Start the icing next
This simple buttercream icing gets a boost from the addition of almond extract. That scary looking blackish dot is actually the blue food coloring. Cream the butter and sugar together, and add milk and flavorings.
Add more food coloring until you get just the shade you want, then start icing the cooled cupcakes. Nothing fancy today, I just smeared it on.

RED VELVET FISHERBOY CUPCAKES
Ingredients
- 1 box Red Velvet Cake Mix
- [ Duncan Hines]
- 1 package vanilla instant pudding
- 1 cup sour cream
- 3 large eggs beaten
- 1/2 cup milk [2%]
- 1/2 cup butter melted
Instructions
- Combine ingredients and mix until well incorporated.
- Add additional red food coloring and cocoa if desired [I didn’t]
- Scoop into lined mini muffin tins and bake according to directions on cake mix.
Notes
cooking time will vary according to pan, oven, and size of cupcakes. Use your nose, when you can smell them they are probably done! Err on the under side, they will be dry and tough if over cooked.
BLUE BUTTERCREAM ICING
Ingredients
- 1 box confectioner’s sugar
- 1 stick butter softened
- 3-4 T milk
- 1 tsp vanilla extract
- 1 tsp almond extract
- blue food coloring*
Instructions
- Cream butter and sugar together and add milk, flavorings and food coloring until you reach the desired color and consistency.
