Take-out Tuesday 3 Ingredient Tomato Gnocchi & Spinach Soup with Garlic Crescents

When I saw this recipe for Trader Joe’s 3 ingredient soup,
it went directly to the top of my must do list!

And paired with 4 ingredient Garlic Crescent Rolls,
dinner can literally be on the table in minutes

The tomato soup is heat and eat,
Stuffed Gnocchi is full of tomato sauce and mozzarella,
and fresh baby spinach adds a pop of color

Don’t worry if you don’t have a Trader Joe’s near you,
this will work with what you can find in your local grocery store too
Look for prepared tomato soup,
fresh or frozen gnocchi, and fresh spinach

Heat the soup until it is hot and just bubbling,
adjusting heat so it doesn’t boil
Add frozen gnocchi and let the hot soup cook the gnocchi,
about 8-10 minutes

Stir in baby spinach leaves

They will immediately wilt down,
continue cooking for a minute or two

That’s it!
Top with Parmesan and serve it up!

Add some easy 4 ingredient garlic crescent rolls for dipping

Melt butter and add garlic seasoning
Place the dough triangles on a sheet pan
and brush liberally with the garlic butter

Roll up and brush garlic butter over the rolls

Top with shredded Parmesan

Bake and serve!



3 Ingredient Tomato Gnocchi & Spinach Soup
Ingredients
- 1 box 32 oz. Trader Joe's prepared tomato soup or 4 cups prepared tomato soup
- 1 pkg 16 oz. frozen Trader Joe's Outside-In stuffed gnocchi or any gnocchi
- 2 cups fresh baby spinach leaves
- 2 oz. shredded Parmesan cheese
Instructions
- Heat soup in a large sauce pan until just bubbling
- Add frozen gnocchi and let the hot soup cook the gnocchi, stirring occasionally for 8-10 minutes.
- Add spinach and cook and stir for 1 more minute letting spinach heat and wilt down into the soup
- Serve soup and garnish with shredded Parmesan if desired

Garlic Crescent Rolls
Equipment
- 1 sheet pan
Ingredients
- 1 can 8 count, crescent roll dough
- 4 Tbsp unsalted butter
- garlic bread seasoning to taste
- 3 oz. shredded Parmean cheese
Instructions
- Separate dough triangles and place them on a baking sheet or sheet pan
- Melt butter and add garlic seasoning to taste
- Brush triangles with seasoned butter and roll up
- Brush roll tops with remaining butter and top with shredded cheese.
- Bake at 375 degrees until golden, about 10 minutes.
