Take-out Tuesday, Bacon Wrapped Green Bean Salad

My favorite dinner in the summertime is a big salad

To amp up an old Southern standby, Green Bean Bundles,

which are small bunches of green beans wrapped in bacon,

I made them into an easy satisfying salad

Your microwave makes quick work of the prep

Fresh green beans, in a ready to cook steamer bag,

can be blanched in several minutes,

no fuss, no mess…and even though I usually don’t recommend

cooking bacon in the microwave {I don’t think it has as much flavor}

for this recipe it’s all right

because the bacon will be finished in the oven

Microwave the bacon in paper towels until about half way done

Bundle each serving of beans with 1/2 strip of bacon,

or several 1/2 strips of bacon 😋

and place in a shallow baking dish

You can make 1 bundle or as many as you need

Microwave the butter to melt, and add garlic powder and salt

Pour the butter sauce over the bean bundles and sprinkle with brown sugar

Bake at 350 for 30 minutes or until bacon is cooked through

savory green bean bundles

Serve atop crisp greens of your choice,

like spinach, romaine, massaged kale or arugula,

and pour pan juices over salad

Season with freshly ground black pepper to taste

You can add chopped cooked chicken if you like to make it even heartier
