Recipe Box, Peachy Spinach Salad with Bacon and Buttery Almonds

Here’s an easy and delicious salad, featuring ripe summer peaches,

that is perfect for an end of summer dinner

Baby spinach, romaine lettuce, fresh peaches, red grapes,

crispy bacon, buttery almonds, bleu cheese

and poppy seed dressing…

Quite a yummy combination!

With or without bacon, it’s a winning combo~

and if you don’t like bleu cheese, sub any cheese you like

I always opt for bacon,

and you could even add cooked chicken to make it even heartier

I used Brianna’s Poppy Seed Dressing,

it’s a light dressing with just a touch of sweet

that compliments the variety of ingredients

Serve it with a delicious Cheesy Zucchini Biscuit!

Peachy Spinach Salad with Bacon and Buttery Almonds

Summer peaches with fresh spinach, romaine, grapes, bacon, bleu cheese and almonds make a tasty summer supper!
Course Main Course, Salad
Cuisine American

Ingredients
  

  • fresh baby spinach
  • romaine lettuce
  • fresh ripe peaches
  • crispy cooked bacon optional
  • red or green grapes
  • bleu cheese crumbles or grated cheese of choice
  • buttery almonds see recipe in notes
  • poppy seed dressing or dressing of choice

Instructions
 

  • Tear lettuce and spinach into smaller pieces and place in individual large bowls, like pasta bowls
  • Peel peach/peaches and chop into 1 inch pieces and add to spinach and lettuce
  • Wash grapes, slice in half and place in bowl
  • Tear bacon into pieces and add to salad
  • Sprinkle salad with cheese and almonds
  • Drizzle with dressing, serve and enjoy!

Notes

Buttery Almonds
Saute sliced almonds in a skillet with a little olive oil and enough butter to coat.  Season with kosher salt and sprinkle generously with brown sugar and cook over medium heat until they begin to turn golden, stirring constantly.  This takes 3-5 minutes, don’t walk away or they can burn.  Transfer almonds to wax paper or a plate to cool. Store in a jar.
