Recipe Box, Loaded Broccoli Slaw

Confession, broccoli is my least favorite vegetable…
I mean it’s okay, and I do like it roasted
but I LOVE broccoli salads!

This broccoli slaw is loaded with all kinds of goodies!

The base is prepared broccoli slaw mix
look for it in a bag in the produce section
or you can get regular slaw mix and add broccoli

Then I added more broccoli, chopped red onion, apples, pears, grapes,
cranberries almonds, walnuts and cashews
I told you it was loaded!

Put the slaw mix into a large bowl and finely chop broccoli florets
Halve grapes and chop apple slices and pears
Place everything on top of slaw and toss to combine

Top with dressing and toss again,
thoroughly mixing dressing in and coating all the ingredients
I recommend making this in advance
to give the salad a chance to soften a little in the dressing
and for the flavors to blend
It will keep for several days in the refrigerator

A perfect light lunch or a side dish with dinner~
I enjoyed it yesterday for lunch with a slice of toast

We’re having it tonight with BBQ pulled pork


Loaded Broccoli Slaw
Ingredients
Salad
- 1 bag 12 oz. broccoli slaw mix
- 1 stalk broccoli
- 1/4 cup chopped red onion
- 1 cup red grapes
- 1/2 cup dried cranberries
- 1/4 cup honey roasted walnuts
- 1/4 cup honey roasted almond slices
- 1/2 cup cashews
Yogurt Dressing
- 2/3 cup plain Greek yogurt
- 1/3 cup sour cream
- 1/4 cup sherry or apple cider vinegar
- 2 Tbsp maple syrup or honey
- salt and pepper to taste
Instructions
- Place broccoli slaw into a large bowl
- cut apple and pear into slices and dice
- cut broccoli tops from stalk, and then cut the florets into small pieces
- cut grapes in half
- Place all the ingredients on top of broccoli slaw and toss to mix
- Add creamy bleu cheese or yogurt dressing to taste, using enough to completely coat everything in the salad
- Refrigerate for 2 hours before serving to soften slaw and for flavors to blend
- Will keep covered for several days in the refrigerator

- Mix ingredients together
Notes
I used my favorite homemade Bleu Cheese Dressing for our salad,
but here are some other great options
A simple yogurt dressing would be good like this one

My husband loves a salad loaded with nuts and fruit. This seems like a good one, except broccoli, for him.

This sounds so good! My husband recently had a Brussels sprout slaw at a restaurant that was delicious, and I am going to try to replicate that recipe.

Such a wonderful salad. Lots of goodies to tempt anyone. I would leave out the grapes, I like them separately. To each their own…lol. Whenever I have a party or a luncheon, I have 1 person who continually wants to bring broccoli salad.
