Sunday Supper, Crazy Good Quesadilla

Quesadillas are one of my favorite last minute dinners
Not only are they quick and easy to make,
you can fill them with just about anything!

Now when I tell you what’s inside this one,
you’ll probably think I’ve lost my mind
or that I’m recalling pregnancy cravings 😂
This quesadilla is like a crazy combination
of chicken wings and Hawaiian pizza…

You know how BBQ chicken wings
are often served with a bleu cheese dipping sauce…
and Hawaiian pizza is topped with ham and pineapple…

Well, this quesadilla has a layer of BBQ sauce,
topped with bleu cheese crumbles
and chopped cooked chicken,
then chopped pineapple

pieces of ham,
and finally a generous sprinkle of grated Gruyère cheese

Another tortilla goes on top
and the quesadillas are ready for cooking~
I gave these a spray of olive oil
and baked them on a sheet pan in the oven,
but you can also cook them in a skillet
with a little olive oil and butter,
flipping to get them crisp on both sides

The bleu cheese and the Gruyere are the “glue”
that holds everything together

As the quesadillas cook, the cheese melts…

It oozes out the edges a little,
making your mouth water as you cut them 😋

They taste amazing!

This crazy combo is sweet, savory, tangy and delicious!
I also made one with bacon instead of ham,
so good!

Adjust ingredient amounts according
to the number of quesadillas you’re making
These make great appetizers too~

Crazy Good Quesadilla
Ingredients
- chopped or shredded cooked chicken
- BBQ sauce
- bleu cheese crumbles
- chopped pineapple fresh pineapple is best
- diced ham or cooked bacon
- grated Gruyère cheese
- flour tortillas
- olive oil spray
Instructions
- Spread a little BBQ sauce on tortilla and top with a layer of bleu cheese crumbles
- Top bleu cheese with chicken, pineapple, and bacon or ham
- Sprinkle a generous layer of Gruyère cheese on top
- Place another tortilla on top
- line a sheet pan with foil and spray a circle of oil on each spot where you will place tortilla stack
- Put filled tortilla stack on oil circle on foil and then spray the top tortilla with oil
- Bake in a 350 oven for 20-25 minutes until hot and melty
- Transfer quesadilla to a cutting board and cut into quarters

We do quesadillas here a lot, especially for fast suppers. I like using shrimp that I keep in the freezer, it only takes 10 minutes to defrost them. Lots of cheese and some green onions, with a little avocado is our favorite.

I love quesadillas too. If they are only available on an appetizer menu, I have been known to order them as my entree. This is a crazy combination, but I’m sure it was delicious.
I do the same Linda, the appetizer section sometimes appeals to me more than anything in the entree section!

Lots of flavor Jenna! We love quesadillas on the panini press. Our favorite combo is leftover pulled pork, bbq sauce, cheese, a little red onion and jalapeño. 🙂
