Sunday Supper, Hash Brown Casserole with Chicken, Bacon & Cheese
I’m always on the look out for dinners that are kid friendly
but also satisfying for myself and my Foodie son the “Chef”
Sharing a house with HHjr and his boys
has been such a pleasure, it’s lots of fun and lots of action!
The boys are 11 and 15 now, so they are always hungry

Hash Brown Potato Casserole is a favorite side dish at my house
I decided to amp it up a little with chicken and bacon
and turn it into a main meal

This is a “dump and bake” casserole,
Put sour cream and Cream of Chicken soup
into a large mixing bowl

Add ranch seasoning and butter and mix well

Add potatoes, chicken and half of the bacon

Add about 2/3 of the cheese, reserving the rest for the topping

Mix well and transfer to a sprayed casserole dish

Top with reserved bacon & cheese

Dish can be covered at this point and refrigerated for baking later
Bake at 350 degrees for 40-45 minutes until bubbling

Creamy, cheesy, good!

This recipe is adapted from Cooktop Cove

Such a delicious comfort meal!
Thanks Angie!
Jenna, my family would love the addition of bacon and chicken to the hash brown casserole. This sounds perfect for a Sunday supper. Happy Sunday!
Thanks Pam, so easy and everybody loved it~
This looks really tempting.
Easy cheesy good!
This looks delicious!
Thank you!
This is a hearty casserole that should certainly please two hungry boys. I bet it disappeared quickly.
Thank you Karen, it did!
This just made me hungry! I love the idea of adding chicken and bacon. I am doing that the next time I make it!
Happy Sunday Jenna!
Thank you Nancy, I think you’ll love it!
I like the idea of having this as a main meal, Jenna, with the addition of bacon and chicken. I can just imagine how hungry those boys always are. They mustn’t be picky eaters, either, which is a wonderful thing. 😊
Thank you Kitty! Actually they are pretty picky, especially the oldest one, Super Teen, who won’t eat vegetables. His younger brother however, loves cherry tomatoes and will eat a whole box! If we’re planning on using them for dinner, we have to hide them from him 😂 He loves artichokes too!
I think my entire family will love this recipe – I better get cooking!
Thanks Mary, easy cheesy good!
I’ve never met a potato I didn’t love Jenna! I love the addition of chicken and bacon and I bet there are never any leftovers. 🙂
Thank you Mary, easy and delicious!

Thanks so much Esme!
Oh, this looks so good and so easy since our local grocery store deli has pulled chicken made to go. I must try this and maybe tomorrow even. Pinned for sure. Thanks for the wonderful recipe Jenna!
It’s so easy and so good! How wonderful to be able to buy already pulled chicken, I wish my store did that! Thanks Kim!
This looks delicious! My husband and I are on keto, but I think this recipe could easily be adapted with cauliflower instead of potatoes – I’ve found they swap out pretty good. Your recipe, instructions and pictures are wonderful! I know that feeding teenagers requires a lot of food! Blessings to you 🙂
Thanks so much Marilyn, easy cheesy good!
This looks so yummy!! I’ve never made a hash brown casserole, but I’m going to have to try this one out – anything that has bacon and cheese in it has to be a winner! I will be featuring your post this week. #HomeMattersParty
Thank you so much Joy! See you then!
