Sunday Supper, Hash Brown Casserole with Chicken, Bacon & Cheese

I’m always on the look out for dinners that are kid friendly

but also satisfying for myself and my Foodie son the “Chef”

Sharing a house with HHjr and his boys

has been such a pleasure, it’s lots of fun and lots of action!

The boys are 11 and 15 now, so they are always hungry

Hash Brown Potato Casserole is a favorite side dish at my house

I decided to amp it up a little with chicken and bacon

and turn it into a main meal

This is a “dump and bake” casserole,

Put sour cream and Cream of Chicken soup

into a large mixing bowl

Add ranch seasoning and butter and mix well

Add potatoes, chicken and half of the bacon

Add about 2/3 of the cheese, reserving the rest for the topping

Mix well and transfer to a sprayed casserole dish

Top with reserved bacon & cheese

Dish can be covered at this point and refrigerated for baking later

Bake at 350 degrees for 40-45 minutes until bubbling

Creamy, cheesy, good!

Hash Brown Casserole with Chicken, Bacon & Cheese

Hash Brown potatoes are baked with chicken and bacon in a creamy cheese sauce, for a family friendly "dump & bake" dinner. Serve with a salad or vegetables for an easy breezy meal. You can make it ahead of time, refrigerate and bake up to 24 hours later

Cook Time 40 minutes

Equipment

  • 1 9" x 9" casserole dish
  • 1 large mixing bowl
  • aluminum foil

Ingredients
  

  • 2 1/2 cups cooked chicken, shredded I used a rotisserie chicken from the deli
  • 16 oz. shredded hash brown potatoes, thawed
  • 2 cups sour cream
  • 1 can 10.5 oz. Cream of Chicken soup
  • 2 cups shredded cheddar cheese
  • 8 slices bacon, cooked and torn into 1" pieces
  • 2 Tbsp Ranch seasoning
  • 4 Tbsp butter, melted

Instructions
 

  • Put sour cream, soup, melted butter and Ranch seasoning into mixing bowl and mix well
  • Add potatoes, chicken, half of bacon, and 2/3 of cheese. Mix well and transfer to prepared casserole dish.
  • Cover and refrigerate at this point if desired
  • Loosely cover with foil and bake for 20 minutes. Uncover and continue to bake for 20-25 more minutes or until bubbling
  • Serves 6

    I like the idea of having this as a main meal, Jenna, with the addition of bacon and chicken. I can just imagine how hungry those boys always are. They mustn’t be picky eaters, either, which is a wonderful thing. 😊

    • Thank you Kitty! Actually they are pretty picky, especially the oldest one, Super Teen, who won’t eat vegetables. His younger brother however, loves cherry tomatoes and will eat a whole box! If we’re planning on using them for dinner, we have to hide them from him 😂 He loves artichokes too!

    This looks delicious! My husband and I are on keto, but I think this recipe could easily be adapted with cauliflower instead of potatoes – I’ve found they swap out pretty good. Your recipe, instructions and pictures are wonderful! I know that feeding teenagers requires a lot of food! Blessings to you 🙂
