Recipe Box, Asian Chicken Bowl
When you want a break from Thanksgiving and holiday food
try this Asian style bowl dinner
HHjr, the “Chef,” surprised me with this the other night,
so I don’t have photos of the process, but it’s really very simple

Marinate chicken in teriyaki sauce for several hours
We like this Veri Veri Teriyaki marinade from Soy Vay
It’s widely available {Wal-Mart, Whole Foods, Target}
or you can order it from Amazon here
I’ve also included a recipe
for an easy home made teriyaki marinade
at the end of this post

Grill the chicken until it’s cooked through,
putting the pineapple on the grill during the last few minutes

While the chicken is cooking prepare the rice and green beans
When everything is done,
cut the chicken into bite size pieces
Put the rice in individual pasta bowls,
top with chicken, pineapple and green beans

Serve it up and enjoy this flavorful dinner in a bowl!

Asian Chicken Bowl
Ingredients
- boneless, skinless chicken thighs or breasts
- teriyaki marinade I use Soy Vay Veri Veri Teriyaki
- pineapple rings
- rice
- green beans or snow peas
- salt and pepper to taste
Instructions
- Put chicken in a large ziplock bag or a bowl and marinate for 2-6 hours in the refrigerator
- Grill chicken until cooked through
- Put pineapple rings on the grill with chicken during the last few minutes of cooking
- Cook the rice and green beans, seasoning to taste with salt and pepper
- When chicken is done, cut into bite size pieces. Cut the pineapple rings into chunks
- Place rice in large shallow individual bowls, like pasta bowls. Top with chicken, pineapple, and green beans
Teriyaki Marinade
Ingredients
- 1 1/2 cups pineapple juice
- 1 package dry onion soup mix
- 1/2 cup soy sauce
- 1 T sesame oil
Instructions
- Combine ingredients in a jar and shake to combine

I love that Veri Veri Teriyaki sauce, Jenna, and what a nice surprise that your son fixed it for you. The meal sounds so good. I made your chicken thighs recipe the other day that has the hoisin and sweet chili sauce. I love that easy recipe!

My son told me that he had chicken teriyaki bowls for dinner the other night, and I thought, boy, does that sound good. But I don’t have a recipe for something like that.
