Take-out Tuesday, Chicken Teriyaki Bowl

This is the perfect summer dinner, it’s easy, it’s healthy,
and you can cook it on the grill!

You can serve it in a bowl with or without noodles

The chicken is marinated in our favorite Teriyaki Sauce,
Soy Vay Veri Veri Teriyaki

You can also make an easy teriyaki marinade with sesame oil,
pineapple juice, dry onion soup mix, and soy sauce

Grill the chicken, adding the pineapple near the end of cooking time
{time will depend on size of chicken and your grill}

You can roast the vegetables on the grill too,
cut the peppers into large pieces
and break off the tough asparagus ends

Put the peppers and asparagus in a mixing bowl
along with the edamame
Toss them with a little olive oil, salt and pepper,
and put them in a grill basket

If you want to use noodles, cook the noodles on the stove top
according to package directions

I like to use thin spaghetti noodles,
but you can use any type of pasta you want

When the chicken, pineapple and vegetables are done,
cut the chicken and pineapple into chunks
Put the warm noodles into large individual bowls
and arrange fruit and vegetables on top

Garnish with chopped green onions and sesame seeds if desired


Teriyaki Chicken Bowl
Equipment
- grill
- grill basket
Ingredients
- Teriyaki marinade I use Soy Vay Veri Veri Teriyaki
- boneless chicken breasts or thighs
- fresh pineapple, cut into slices
- asparagus spears
- red peppers
- edamame
- olive oil
- salt and pepper
- thin spaghetti or any pasta optional
- green onions optional
- toasted sesame seeds optional
Instructions
- Marinate the chicken for up to 6 hours in the teriyaki sauce. You can cut the chicken into large chicken fingers if desired, this will shorten the cooking time plus the pieces will absorb more flavor from the marinade
- Cut the peppers into large pieces and break off tough ends of asparagus
- Place the peppers and asparagus into a mixing bowl with edamame. Drizzle with olive oil and season with salt and pepper, tossing to coat.
- Grill chicken to desired doneness
- Put vegetables into a grill basket and cook them along side with chicken on grill, tossing occasionally.
- Add pineapple near the end of cooking time until it is warm and has grill marks
- Cook pasta according to package directions, drain and keep warm
- Cut chicken and pineapple into chunks
- Place noodles in the bottom of large individual bowls and top with chicken, pineapple, and vegetables, arranging in a rainbow pattern. Drizzle with additional teriyaki sauce if desired. Garnish with green onions and toasted sesame seeds

Looks colorful and fabulous, Jenna! I use that same Teriyaki Sauce. I had chicken tenders on the grill tonight with another marinade called Garlic Expressions. Now I’m craving pineapple on the grill. 😊
