APPLES! Turns out, an apple a day does keep the Doctor away!

My husband, HH has been struggling with acid reflux for a while and has tried all kinds of pills and treatments.  After breaking out into a rash  3 days after starting Prilosec otc, he swore off all drugs.  Then, a crazy thing happened.  I got a random email, which I read because it was labeled “help for acid reflux.”  Turns out the key is eating an APPLE!  We did some further checking and here’s what we found:

APPLE HEALTH BENEFITS

1. Promotes bone health

2. Helps asthma and studies show pregnant women who eat apples have lower rates of asthma in their children

3. Prevents Alheiszmer’s

4. Lowers cholesterol, increases heart health

5. Helps prevent lung cancer, breast cancer, colon cancer

6. Lowers diabetes risk

7. Promotes weight loss

8. Regulates your digestive system

9. Stronger, whiter teeth

10. Detoxifies your liver and boosts your immune system

We will be eating a LOT of apples around here from now on! Here are some recipes to get you started incorporating more apples into your diet.

How about starting your day with a McApple? A breakfast sandwich made with an English muffin, a fried egg, apple slices and cheese

McAPPLE BREAKFAST SANDWICH

cheese, egg, apple, UNPEELED [just wash well and keep the nutrient filled peel on]

While you’re toasting the muffin, fry the egg in a little butter or Olive oil and just throw some apple slices in the pan with it so they will soften

When you flip the egg, top it with a little cheese so it starts to melt while the egg finishes cooking.  I used a thin slice of Gouda here [70 calories]
and just tore it in half and put one half on the egg and 1/2 on the apples.

Go TOPLESS if you like, and eat the rest of the apple on the side!

When you get the urge for a snack, how about an

“APPLE & PEANUT BUTTER “SANDWICH”

Just spread apple slices with some peanut butter or almond butter and you have a delicious, healthy snack that will keep you going for hours!

APPLE SNACK SMART

2 apple rings

peanut butter OR almond butter

granola, raisins optional

How about a bowl of warm soup?  This BUTTERNUT SQUASH SOUP with APPLES makes a delicious lunch or dinner.

You can buy Butternut Squash Puree at Williams Sonoma

or you can make your own [I’ll tell you how in the recipe below]

Chop up a green apple and some onion

add the squash puree and chicken broth, give it a stir and let it cook over medium heat for 10 minutes

Serve it up and garnish with some toasted almonds!

BUTTERNUT SQUASH SOUP w/APPLE

Course Soup
Cuisine American

Ingredients
  

  • 16 OZ jar butternut squash puree [Williams Sonoma]
  • 1 cup chicken broth
  • 1/2 yellow onion diced
  • 1 green apple diced
  • dash of cream
  • sliced toasted almonds
  • S&P

Instructions
 

  • Saute onion and apple in OO over medium heat in large sauce pan until onion is translucent, about 7 minutes. Add squash and broth, S&P. Simmer over low heat 20 minutes. Increase heat to medium high and add a dash [1/8cup] 1/2 n 1/2 or cream. Stir and continue heating until hot but not boiling. Ladle into bowls, top with almonds.

Notes

Alternate method:
1 Butternut Squash cut in half, from stem to blossom end.
1 yellow onion
Scrape out seeds and fiber (sharp tipped spoon, or melon ball tool works perfectly.)
Place the squash cut side down on parchment lined, shallow baking pan which has been brushed with oil. Bake squash in a preheated 375˚ (F) oven until squash flesh is tender when pierced with a knife tip.
Remove from oven and allow to cool a while. When cool enough to handle, use a spoon to scrape squash flesh from squash skin. Set aside.
In a Dutch oven or soup pot saute chopped yellow onion in a tablespoon or so of butter or olive oil until tender and translucent. Add cooked squash flesh to the pot and add vegetable or chicken stock. Stir while it warms, then puree with a stick (immersion blender), or pour into an electric blender or food processor fitted with metal blade and whir until smooth; adding more vegetable or chicken stock until desired consistency is reached. Pour back into pot and warm over medium heat, adding the apple and cream. Serves 4

  3. Thanks for the info, my husband and my dad both have reflux, can’t wait to tell them about this. The Mcapple looks delish, never would have thought of it, but I love it!

    • Hi Kari, Tell the guys to add some honey to their diets too, my husband has been doing this for 2 weeks with no symptoms at all since day 1! He usually has some apple and honey for breakfast, putting the honey on toast and I try to incorporate apple into dinner or he’ll have some for dessert. I will be posting lots of apple recipes coming up so check back! I wish we had an Italian market around here, I am envious! You can keep your snowbirds though, I know how challenging they are!
