Recipe Box, Key West Seafood Sauce

I have a little gift for you today, let’s call it a “Celebrate Spring” gift!
Try not to notice the Santa plates, because that kinda kills the whole spring mood I’m trying to create…
I have been trying to pry this recipe from HHjr since he made it for my birthday in December.
The. Best. Sauce. Ever.
I think he was trying to keep it in “the vault,” you know until he becomes a world famous chef and his cookbooks will be on the New York Times Best Seller list…
But the other day, there it was…in my inbox~innocently sitting there, tagged scallop sauce.
This, ladies and gentlemen, is not just a scallop sauce, it is a trip to the moon! Seriously.
AND, it’s so easy to make you are bound to be shaking your head in doubt
Trust me you are going to want to try this, especially with some fresh diver scallops wrapped in bacon or some freshly caught wild Alabama shrimp, or with a straw…anything that goes with a buttery citrus flavor~ just don’t tell anybody how easy it is! Let them think you’re a culinary genius…
KEY LIME SEAFOOD SAUCE
Ingredients
- 4 T butter
- 2 T lime zest
- 1/2 lime* juiced
- 1/2 orange* juiced
- 1/3 cup orange marmalade
- 1 garlic clove minced
Instructions
- Combine all ingredients together in a sauce pan and simmer for 5 minutes. Reserve some sauce for serving and use the rest to baste the seafood during grilling. Makes about 2/3 cup

Shhhhhh….keep this soon to be famous sauce well guarded!

Jenna, I know that sauce has got to be good, especially on a bacon-wrapped scallop! I had to chuckle at Pattie’s comment, we were in the 70s on Sunday and are in the teens this morning…brrr! Hope your weather is milder 🙂
