Recipe Box, Summer Garden Favorites

Is your garden growing? Are the farmer’s markets overflowing?
Today I am going to re-share some of my very favorite Garden recipes and tables to use with your summer bounty while I am busy entertaining everyone during our family reunion~
Garden Sliders are so colorful, baked eggplant chips with a Parmesan crust, sandwich mushrooms, colorful peppers, onions and cheese into a flavor filled bite
Garden Soup comes together quickly with sauteed zucchini and an immersion blender
Grilled Vegetable and Couscous Salad will make you feel so healthy!
Blackberry Farms Squash Casserole is my very favorite version of squash casserole, the secret ingredient is Manchego cheese~
Stacked Tomato Salad is like a BLT without the bread
AND CORN!
Corn is my very favorite summer vegetable, and I had to honor it with this Vegetable Garden Table
I sometimes saute a little corn and add it to a casserole or salad, but I prefer it plain, roasted, boiled or grilled with butter and salt. Fresh corn doesn’t need any enhancement in my book!
Bees in the Garden features Eggplant Crisps and a Butterfly Sandwich
Depending on your climate, you might even want to have a Garden Party!
Happy Summer Dining!

Thanks Jenna! Everything looks wonderful!
Are you hosting? If so, I know everyone’s in for a treat.
I remember those darling plates the first time you used them, Jenna!! They are fabulous along with all your impressive garden produce. I’m kicking myself for not planting any peppers…dang it!
I can’t wait to try your garden couscous salad….thanks so much for the link to the recipe.
LOVE both tables…you always have such unique & colorful items. Must match your personality!!
Your tablescapes + recipe ideas are always so inspiring! I loved this post a lot… gardening just makes me so happy + I love seeing all the different ways I can use some of the produce 🙂
Oooh, I like the BLT’s without the bread idea, and everything is more fun in a stick! Enjoy your reunion Jenna:@)
Love your fresh-from-the-garden ideas Jenna! Thanks for the reminder, I need to pull out my Blackberry Farms Cookbook! Our June has been WAY too hot and I’m having to water pots twice a day…
