Take-out Tuesday, Green Chili Strata with Bacon Roses
This might just be the easiest and fastest breakfast casserole you will ever make
It literally takes maybe 5 whole minutes 🙂
Oh yeah, and like all good breakfast casseroles you do it ahead of time 🙂
You layer the tortillas with cheese and green chiles and then pour egg milk mixture over all
Everyone always loves it 🙂
You can serve it with Bacon Roses
Cut each bacon slice in half and roll up and place in a mini muffin pan
Place pan on a baking sheet just in case there’s an overflow
Bake at 350 for 30-35 minutes until crispy
Remove from pan and drain. Some of the pieces might still be not quite done, but you can finish them by putting them in the microwave for a 10-20 second stint
I made these the day before the party and reheated them in small batches in the microwave. This crisped the still fatty areas, and brought them to room temperature for the buffet.
It’s hard to resist a bacon rose 🙂
Green Chile Strata
Ingredients
- 6 large size flour tortillas
- 1 4 oz can chopped green chilies drained
- 3 cups grated Mexican blend cheese
- 8 eggs beaten
- 2 c 2% milk
- 1 cup 1/2 n 1/2
Instructions
- Grease 13×9 and cover bottom with 2 tortillas, tearing in pieces to make a layer, sprinkle with 1/3 chiles then 1/3 cheese. Repeat layers. Beat eggs with milk and salt and pepper and pour over layers. Cover and refrigerate overnight
- Bake 350 45-60 min., until puffed and golden and set in the middle. Cool 5 to let set before cutting into squares. Serves 8-12

Bacon Roses
Equipment
- mini muffin pan
Ingredients
- 12 slices bacon cut in half down the center
Instructions
- Roll each half slice into a loose roll and place in a muffin tin well.
- Bake at 400 for 30-35 minutes until cooked through and crispy.
- Drain well on paper towels.
- If any of the rolls aren’t quite done, finish them in the micorwave, wrapped in paper towels in batches, cooking at 10 second intervals, until done.
- These can be made a day ahead and rewarmed before serving. Makes 24 roses, plan on 2-3 per person

In Maine we have so many houseguests and I do like to have a breakfast casserole in the refrigerator so that all I have to do is take it out and heated up. This one sounds like a real winner.🎄
