Recipe Box, Peppermint Mousse Parfaits

Wow, time is flying!
We have been having a lot of fun with the Advent Tree
It won’t be long now!
The other day the boys found a melted snowman in their sacks
Some mini marshmallows
Jelly beans, a carrot nose and a snowman printable that I found at Life in a Larger Story here
While they were noshing on snowmen we had some Peppermint Parfaits
These are creamy little bowls of peppermint heaven
All you need are a few ingredients, chocolate wafers, instant pudding mix, milk, Cool Whip, peppermint extract and candy
Pulverize the chocolate wafers then add 2 T melted butter and mix again. The crumbs will still be very loose, but the butter adds just a little stability
Put a little in the bottom of individual bowls, shot glasses, or any small vessel
Martini or wine glasses would also be great for individual servings
I used these individual “Just Desserts” by Libbey. These straight sided bowls are perfect for single serving desserts, dips, or appetizers
I used Andes Peppermint chips, but you could use any peppermint candy
Sprinkle a layer of peppermint on top of the cookie crumbs
To make the mousse, make the pudding according to the box directions [I used French Vanilla, which is very yellow, so use regular vanilla for better color control]
Beat the cream cheese until fluffy
Then combine pudding, cream cheese, dry cheesecake pudding mix, red food coloring and peppermint extract
Now fold in Cool Whip
You can use a small scoop to fill the dishes
Then smooth out the tops with the back of a spoon
Sprinkle a little of the remaining cookie crumbs on top and add more peppermints
And you are ready for a party!

PEPPERMINT MOUSSE PARFAITS
Ingredients
- 1 box 9 oz., Nabisco Chocolate Wafer cookies
- 2 T melted butter
- 1 box Instant Vanilla Pudding mix
- 1 box Instant Cheesecake Pudding mix
- 2 cups milk
- 1 cup Andes Peppermint Chips or any crushed peppermint candy
- 8 oz cream cheese softened
- 2 tsp Peppermint extract
- 8 oz Cool Whip thawed
- red food coloring
Instructions
- Crush wafers in food processor. Add butter and mix again. Put a layer of crumbs in the bottom of individual dishes, reserving about 1/2 cup for garnishing later. Sprinkle with a layer of peppermint candy, again reserving a little for garnishing
- Mix milk and vanilla pudding until blended. Set Aside. Beat cream cheese until fluffy. Add the vanilla pudding, dry cheesecake pudding mix, food coloring and peppermint extract. Beat to combine, then fold in cool whip. Refrigerate for 1 hour.
- Sprinkle a heaping Tablespoon of cookie crumbs into the bottom of each dish. Top with a layer of crushed peppermints.
- Spoon prepared mousee into dishes, smooth the top with the back of a spoon. Top with reserved cookie crumbs and crushed candy. Makes 18 1/2 cup servings.
