Take-out Tuesday, Sweet and Sour Chicken Sliders with Grilled Pineapple & Peppers

I have a confession to make… I been a little distracted lately…
I have been taking photos with my camera on a weird setting…
Yikes!! You’d think I would notice this!
I have a pretty good excuse…
I have spent 36 out of the last 40 days with one or more of my grandchildren underfoot…
I am Blessed I know, and they are so precious……but very exhausting!
So I have edited the you know what out of these photos so I could share them with you
I could have waited and made this again for better photos, but I want you try this recipe now, this week, asap!
It’s perfect for these sizzling temps~
Put boneless, skinless chicken thighs into a slow cooker
Cover with equal parts BBQ sauce and Asian sweet chili sauce*
* reduce the ratio if you want it less spicy. I am not a fan of a lot of heat and the 50:50 ratio is fine for me~ The sweetness from the pineapple helps too when eaten together
Make some vegetable skewers with lots of peppers, zucchini and corn. Add the pineapple to skewers or just grill the rings
If you don’t want to bother with the grill, you can simply roast, broil or saute them…
If you want to keep your kitchen cool, simply serve the peppers and pineapple raw
The chicken will shred by itself after cooking
Pile the chicken onto nice soft toasted buns, like Hawaiian rolls
Top with pineapple and serve with grilled veggies and a side of rice
and lots of napkins!
Drizzle more sauce from the slow cooker over sliders if desired

Sweet and Sour Chicken Sliders with Grilled Pineapple and Peppers
Equipment
- slow cooker
Ingredients
- 6 boneless skinless chicken thighs
- 1 cup BBQ sauce
- 1 cup Asian Sweet Chili Sauce
- salt and pepper
- 2 zucchini cut into 2 inch pieces
- 2 ears corn cut into 2 inch pieces
- 1 red pepper cut into large squares
- 1 yellow pepper cut into large squares
- 4-6 pineapple rings
- Paprika
- BBQ seasoning optional
- slider buns like King’s Hawaiian Rolls, toasted
Instructions
- Place chicken into sprayed or lined slow cooker and sprinkle with salt and pepper. Cover with BBQ sauce and then pour Asian Sweet chili sauce over all. Cover and cook on low 8 hours or high 3-4 hours. Just before serving remove and shred.
- Skewer vegetables and sprinkle with salt, pepper, paprika and BBQ seasoning if desired. Grill over medium hot coals 15-20 minutes until done.
- Serve chicken on toasted slider buns topped with a pineapple ring and veggies on the side
HH whisked me away to the beach last weekend for some R & R by ourselves, so I’m hoping I will be a little more on top of things this week and take better photos 🙂 and not spray paint the grass or pour orange juice in the coffee pot

This looks delicious! I will have to give it a try. I am also going to check out your Slow Cooker recipes. I did baked potatoes in the crockpot the other night. They turned out beautifully, although it did take 5 and 1/2 hours on high for 4, not the 4 hours the recipe said.
