Recipe Box, Pepperoni Lovers Crostini

Pepperoni…
Are you a fan? I love cured Italian meats and recently discovered a way to make them a tad healthier, Salami Chips, and decided to try this method with pepperoni to make a topping for crostini
After 20-30 seconds in the microwave, most of the fat is rendered out and it can be diced up to combine with other ingredients
I didn’t say this was a healthy dish, just a little health-i-er 😘
I did use reduced fat cream cheese and 2% extra sharp cheddar
Mix the cheese, onions and pepperoni with mayo and cream cheese and enough sour cream to achieve the desired consistency
Prepared as written, this is more than a spread than a dip, so provide small toasted baguette slices, a canapé knife, and let people make their own crostini
If you prefer a thinner dip consistency for chips, just add more sour cream
The dark crispy edges make this taste like a deep dish pepperoni pizza, yum 🍕

Pepperoni Lover’s Crostini
Ingredients
- 1/2 cup good mayonnaise like Dukes
- 1/4 cup light sour cream*
- 8 oz low fat cream cheese softened
- 8 oz extra sharp 2% cheddar grated
- 2-3 green onions chopped
- 36-40 small slices pepperoni
- cayenne or red pepper flakes optional
- small baguette slices toasted
Instructions
- Lay pepperoni on 2 layers of paper towels. Microwave pepperoni for 20-30 seconds on high to render fat. Drain well and chop into small pieces.
- Combine with sour cream, cheddar, cream cheese, mayonnaise and green onions. Season with red pepper if desired. Transfer mixture into a small baking dish.
- Bake at 350 for 20 minutes or until heated through and bubbling. Serve with toasted baguette slices.
