Recipe Box, Zucchini Hassleback Heros

Do you like Italian style submarine sandwiches or heros, loaded with Italian meats and cheese?
Italian sandwiches are one of our very favorites
This is a lightened up, lower carb version
All the wonderful decadence, minus the bread
I used salami, ham, Manchego, Parmesan, Italian dressing and then topped it off with a drizzle of Alfredo, chives and bread crumbs
Other favorite ingredients, like pepperoni, capicola, red or banana peppers, onion, tomato, could be added or substituted
Also, you could use Marinara instead of Alfredo, and any cheese you prefer

Put the zucchini between to skewers when slicing to make deep cuts and prevent slicing all the way through
After slicing, wrap zucchini in a clean towel and microwave on high for 2 minutes. Check softness and continue to microwave at 1 minute intervals until middle is soft but zucchini still maintains shape- mine took about 4 minutes
Whip up a simple Italian dressing with olive oil, salt, pepper, garlic powder & Italian seasoning, or use bottled Italian dressing
Brush dressing liberally over cut zucchini
Cut or fold your meats and cheeses and tuck in between zucchini slices
Place zucchini on a non stick foil or parchment lined pan for easy clean up
Drizzle with Alfredo or Marinara sauce
Sprinkle with Parmesan and sliced green onions
Bake at 400 degrees for 15-20 minutes until everything is melted and beginning to brown

ZUCCHINI HASSLEBACK HEROS
Ingredients
- 1 large zucchini
- 2 slices deli ham
- 6 slices salami
- 1-2 oz sliced Manchego cheese
- 1/4 cup Alfredo sauce
- 1 oz grated Parmesan cheese
- 1 T breadcrumbs
- 1-2 T chopped green onion
- Italian Dressing
- 1 T olive oil
- dash garlic powder
- dash Italian seasoning
- salt & pepper
Instructions
- Cut ends off zucchini. Make deep cuts, to form slices, about 1/4 inch apart, by placing zucchini between two skewers on a cutting board to prevent cutting through zucchini. Wrap zucchini in a clean towel and microwave for 2 minutes on high. Check for softness, and continue to microwave at 1 minute intervals until zucchini is softened on the inside but still able to retain it’s shape.
- Make dressing by mixing olive oil with seasoning. Place zucchini on a non stick foil or parchment paper lined baking sheet. Brush liberally with dressing.
- Fold or cut meat and cheese into smaller pieces and stuff in between slices. Drizzle with Alfredo. Sprinkle with Parmesan, bread crumbs and green onions. Can be refrigerated at this point if you want to assemble in advance.
- Bake at 400 degrees for 15-20 minutes or until melted and beginning to brown

This looks like something Ray would really enjoy, so I am saving this idea for sure. WE have had a lot of fresh zucchini this summer from the farmer’s market, but I usually just saute it in a little olive oil with a bit of garlic. If want to get fancy I sprinkle parmesan on it. However, this looks more filling and really tasty!
