Recipe Box, Oven-Dried Strawberries

Do you ever open your fridge and see sad strawberries?

You know, bruised berries or berries a little past their prime?

Don’t toss them out!

You can bake them in the oven to dry them and extend their life

After baking put them in a jar and keep them in the refrigerator for up to 10 days!

I saw this recipe for oven dried strawberries while flipping through Bon Appétit magazine {8/17}

This is the SIMPLE issue, and it’s definitely worth a look, every recipe is 5 ingredients or less

Bon Appétit has finally realized that today’s cook doesn’t have all day to spend in the kitchen  🍾

The great thing about these berries is that you can vary the drying time by adjusting the time spent in the oven.  I baked mine for the recommended 20 minutes and they were dry around the edges but still soft and a little juicy in the middle

These are wonderful additions to salad, yogurt, cereal, ice cream, baked goods

If you want to add them to snack or trail mix, you might want to increase baking time so they won’t be so sticky

It’s so handy to have a jar of berries at your fingertips for last minute additions!

Oven Dried Strawberries

Prep Time 5 minutes
Cook Time 20 minutes
draining time 30 minutes

Ingredients
  

  • 1 lb strawberries
  • 2 T sugar*

Instructions
 

  • Cut off stems and then cut berries into 1/2s or 1/4s. Place them in a bowl and toss with sugar. Let berries sit for 30 minutes to release juice. Bake berries in a single layer on a foil or parchment lined baking sheet at 180-200 degrees, for 20 minutes**
  • The berries will darken in color, be dry around the edges and still slightly moist and soft in the center.
  • Makes about 1 1/2 cups. Store covered in refrigerator for up to 10 days.

Notes

*if berries are very sweet decrease amount of sugar
**adjust baking time for more or less moisture content in dried berry
Great for salads, breakfast cereal, yogurt toppings, ice cream, snacks

  10. Thanks for sharing this recipe! I cannot tell you how many times I have indeed thrown out “sad” strawberries. Thanks, as well, for mentioning this issue of Bon Appétit. I had given up my subscription because the recipes has just become ridiculous. Hopefully this is a nice, new direction for them.
