Take-out Tuesday, Sweet Chili Teriyaki Chicken, Pineapple & Smoked Sausage Kebabs

I’m having a lot of fun with pineapple this month
I love having fresh pineapple in the refrigerator, it’s such a versatile ingredient
A leftover piece of boneless chicken, some smoked sausage links from the freezer, and fresh pineapple make a very tasty combo!
We love the Soy Vay brand of Teriyaki sauce, it comes in several different flavors. I had this Island Teriyaki on hand, and marinated the chicken for about 4 hours
Grillmaster HHjr prepped the kebabs in a matter of minutes
He did this about an hour before grilling so the kebabs could further marinate with a little Sweet Chili Sauce
Sweet Chili Sauce is another pantry staple, it is sweet, tangy, with just little burst of heat
Coated with Sweet Chili Sauce, the kebabs went into the refrigerator until cooking
We made a basting sauce with a mixture of both the Teriyaki Marinade and the Sweet Chili Sauce
Brush the sauce on kebabs during cooking, whether you are cooking in the oven* or on the grill
*you can cook the kebabs in the oven on 375 for about 30 minutes or until chicken is done
Such a great combo of textures and flavors
By the way, this would make great appetizers too!
Cut the sausage into smaller pieces, skewer with a piece of pineapple and bake or grill. Make chicken and pineapple ones too.
Great for game day!

Sweet Chili Teriyaki Chicken, Pineapple & Sausage Kebabs
Equipment
- kebab skewers
Ingredients
- 1 boneless chicken breast
- 3/4 lb Conecuh Sausage smoked sausage or Keilbasa
- 6 pineapple rings cut into 1/4s
- 1 cup Teriyaki marinade or sauce
- 1 cup Sweet Chili Sauce
Instructions
- Marinate chicken in 1/2 cup Teriyaki sauce for 1-6 hours.
- Cut chicken and sausage into 1 or 2 inch pieces. Place pieces on skewers, alternating with pineapple pieces.
- Brush kebabs with 1/2 cup Sweet Chili Sauce. Put kebabs in refrigerator at this point for an hour or you can cook right away.
- Make a basting sauce with remaining 1/2 cup marinade and 1/2 cup Sweet Chili Sauce.
- Cook at 375 for 20-30 minutes, turning and basting several times, or grill kebabs or medium coals, basting frequently, 20 minutes or until chicken is cooked through.
- Cooking times will depend on the size of chicken pieces and grill temps
