Take-out Tuesday, Amped Up Taco Tuesday!

We often have tacos during the week
The boys love them and they are so easy to make
We have made them in a variety of ways
Loaded Chicken and Vegetable Taco Bake
Baked Ground Beef and Refried Beans Tacos
Taco Salad is my personal favorite
And I love Taco Soup
We’ve even made a Taco Bread Boat
But when I suggested tacos last week
I had no idea HHjr was going to surprise me with this!
He started with a layer of Knorr Taco Rice
Topped with taco seasoned ground beef
Then a lightly fried flour tortilla
Warm cheese queso was poured over the stack
And he topped it with chopped tomatoes and chives
Heaven!

Amped Up Tacos
Ingredients
- 1 lb. ground beef {lean beef or ground chuck}
- 1 pkg. taco seasoning mix
- 6 small flour torillas
- 2 pkg Knorr Taco Rice {each pkg makes about 2 1/2 servings}
- cherry tomatoes chopped
- chives or green onions chopped
- 1 container prepared queso dip {in refrigerated section near cheese}
Instructions
- Brown beef, drain and continue to prepare according to taco seasoning package directions. Prepare rice as directed on package. Lightly fry tortillas in a large skillet with a scant amount of oil. Set aside on paper towels. Heat queso.
- Place a layer of rice on a plate. Top with a layer of taco meat. Top with tortilla. Pour warm queso over the top. Garnish with chopped tomatoes and chives. Serve immediately.

Jenna, how nice to have a chef in the house to whip up fabulous dishes. This really looks great, my son and DIL would love this and I am going to share the recipe with them. Happy Tuesday, looks like a rainy and windy one!
