Recipe Box, Pot ‘o Gold Quiche

I am in a St. Patrick’s Day ☘️ mood this week

and want to share this delicious quiche with you today

I love to make quiche, not only does it taste wonderful,

it’s actually very easy to make,

you can use whatever you have on hand

and it’s a one dish meal…that checks a lot of boxes for me!

I have a basic formula for quiche

Place a pie crust dough round in a deep pie/quiche dish

Fill it up with whatever you like

Add 4 oz grated cheese {optional}

Finish with a mixture of 4 eggs and 1 cup of milk or cream

🥦 + 🌽 + 🧅 + 🥓 + 🧀 + 🥚 + 🥛 = 🥧

You don’t even have to cook the spinach or asparagus!

You can roast the onion along with the bacon on a parchment lined baking sheet

400 degrees for 20 minutes, drain well and toss the greasy parchment away

Next came the “gold nuggets”

and the secret “lucky” ingredient

Beer Cheese Soup!

This Beer Cheese Soup is sooo good,

I found it at my local Piggly Wiggly

but you can use any cheese soup

or substitute a cup of grated cheese

After the soup or cheese goes in, add the egg mixture

Top with Parmesan and bake

Baking times can vary, so check after 40 minutes and remove when it is set in the middle

Let sit 15 minutes before slicing

It is a rainbow on your plate!

Pot ‘o Gold Quiche

Prep Time 10 minutes
Cook Time 50 minutes
Course Brunch, Main Course
Cuisine American, French

Equipment

  • deep pie or quiche dish

Ingredients
  

  • 1 pie crust dough round
  • 2 cups raw spinach leaves
  • 20 spears of thin asparagus tough ends snapped off
  • 6-8 slices thick bacon cooked and drained
  • 1/2 yellow white or sweet onion, diced and roasted with bacon or sauteed in skillet
  • 1 1/2 cups corn kernels
  • 1 cup thick beer cheese soup or 4 oz. grated cheddar
  • 2 oz. Shaved Parmesan
  • 4 eggs
  • 1 cup milk
  • salt and pepper

Instructions
 

  • Place dough into a deep 9″ pie plate or quiche dish. Add spinach leaves, asparagus, bacon, onions, and corn. Pour soup evenly overall. Beat eggs, season with salt and pepper and then stir in milk. Pour this milk mixture slowly into quiche dish letting it seep into all the nooks and crannies. Top with Parmesan. Can be refrigerated at this point for baking later.
  • Bake at 350 degrees for 40-60 minutes, until set in the middle. Let sit 10-15 minutes before cutting into wedges

Notes

note: this makes 1 9 inch quiche, you can cut it in 1/4s for main dish servings or 1/6s or 1/8s for a side dish
Baking times may vary due to ingredients and your oven, bake until quiche is set in the middle, testing with a skewer or knife

  1. I LOVE your basic recipe — anything goes. The corn and cheese soup sound wonderful — the perfect bonus items! I’ll be keeping and trying this. I love quiche but I’ve always been quiche averse in making it. No more!
