Recipe Box, Lemon Rolls with Lemon Cream Cheese Filling

I know Easter was different this year…
I tried to keep things as normal as possible
even though part of our family was missing
and we watched church on TV…
One of the boys found an Easter egg floating on a frisbee in the pool!
We had cream cheese filled lemon rolls for an Easter breakfast treat
They are simple to make, all you need is
Lemon, cream cheese, bread or roll dough and 3 kinds of sugar
with an optional splash of vanilla
Mix the cream cheese with brown sugar and lemon zest
I also added a touch of butter vanilla or vanilla
I used Pillsbury french bread dough in a can
It is a sticky dough, so keep it well chilled
until you are ready to unroll it on to a sheet of parchment paper
The parchment paper will aid in rolling up after filling
Sprinkle the filling layer with granulated sugar and roll up starting with the long side
Wrap parchment around dough log and return to refrigerator until cutting if possible
Cut dough into about 12 slices and place in a greased baking dish with space between rolls
{I put 8 in one pan and the remaining 4 in another smaller pan}
Bake at 375 degrees for about 25 minutes, checking after 20 minutes
Make icing while rolls are cooling by mixing lemon juice and powdered sugar
Let rolls cool a bit before icing so it doesn’t run off
Drizzle glaze over rolls and garnish with lemon zest

LEMON ROLLS WITH LEMON CREAM CHEESE FILLING
Ingredients
- 1 can 11 oz. Pillsbury refrigerated french bread dough*
- 8 oz. cream cheese softened
- 1-2 tsps Butter Vanilla or Vanilla extract
- 1/2 cup brown sugar
- 2 Tablespoons white granulated sugar
- 1 lemon zested
- Icing
- 2 T lemon juice {or more if needed}
- 1/2 cup powdered sugar
Instructions
- Mix brown sugar with cream cheese, vanilla and 1/2 of lemon zest until smooth.
- Lay out a large sheet of parchment paper and unroll dough onto paper forming into a large rectangle. Gently spread the cream cheese filling over dough, leaving about 1/4 inch border. Sprinkle dough with white sugar. Carefully roll dough into a log, starting with the long side and using the parchment paper to aid rolling.
- If time permits, cover log with parchment paper and place in refrigerator to make slicing easier.
- Slice dough log into 12 even slices. Place slices cut side up in a greased baking dish leaving space between rolls for expansion. {Use 2 pans if necessary} Bake at 375 degrees for 25 minutes or until dough is cooked through and golden.
- Let rolls cool 10-15 minutes before icing.
- Icing: Add lemon juice to powdered sugar and stir. If mixture is too thick add more lemon juice. If icing is too thin add more powdered sugar. Drizzle icing over rolls and garnish with remaining lemon zest.
- Rolls can be assembled the night before and refrigerated until baking in the morning.
