Recipe Box, Broccoli & Cauliflower Nachos

These lo carb nachos are so tasty,

you will never miss the chips!

You can serve them as an appetizer or a side dish

and they’re easy to make too!

First cut broccoli and cauliflower into smallish florets

and put them on a parchment paper lined baking sheet

Drizzle them with olive oil,

sprinkle with chopped onions and minced garlic,

and season with salt and pepper

Roast the vegetables in the 400 degree oven for 20-30 minutes

until they begin to char around the edges

Now top them with crispy bacon pieces

Sprinkle with grated cheddar or whatever cheese you want

And top it all off with an optional sprinkle of french fried onions*

Return to the oven for 3-5 minutes to melt cheese and crisp onions

Serve them up!

Just like regular nachos, these can be messy,

so I recommend serving them with plates and forks

if you want to have them for an appetizer

We had these nachos as a side dish along with chicken for dinner

A great way change up a meal!

Broccoli & Cauliflower Nachos

Ingredients
  

  • fresh broccoli
  • fresh cauliflower
  • olive oil
  • salt and pepper
  • minced red or white onions
  • minced garlic
  • cooked bacon
  • grated cheddar or cheese of choice
  • french fried onions

Instructions
 

  • Cut broccoli and cauliflower into small florets, removing long stems
  • Place florets onto a parchment paper lined baking sheet
  • Drizzle with olive oil and season with salt and pepper. Toss around to coat and spread into an even layer
  • Sprinkle broccoli and cauliflower with minced onions and garlic
  • Roast at 400 degrees for 20 minutes and check. Continue roasting 5-10 more minutes until broccoli and cauliflower is soft and beginning to char
  • Remove from oven and sprinkle with bacon, then cheese, then fried onions on top
  • Return to oven for 3-5 minutes to melt cheese and crisp onions
  • Serve immediately

Notes

Serve as a side dish or as an appetizer with small plates and forks for ease of eating

substitute chorizo sausage or any sausage for bacon,

lighten them up with cooked chicken or keep them vegetarian…
