Take-out Tuesday, Marinara Ricotta Meatball Bubble-up

I recently tried a recipe on my April recipe bucket list for Baked Ravioli

I made a Marinara Ricotta Dip sauce for dipping ~

The baked ravioli was good but I probably won’t make it again

BUT

One of my friend’s said that the dip was so good he would even eat it on a shoe!

I saved the leftover dip thinking it would come in handy for something…

I had some meatballs in the freezer leftover from last week’s

Magic Mini Meatball Muffins and a dinner idea was born

Why not make a meatball bubble up!

The sausage, ground beef and cheese meatballs

tucked into the marinara ricotta sauce with biscuit dough pieces

and baked until hot and golden…

Yes please!

It’s kind of like spaghetti and meatballs with a side of garlic bread…

without the pasta!

If you don’t happen to have homemade meatballs tucked away in your freezer,

you can buy frozen meatballs to use,

but my meatballs are super easy to make

The marinara ricotta dip is so simple to throw together

Combine jarred marinara with ricotta cheese,

season with Italian seasoning and Parmesan

During baking the meatballs cook down into the sauce

and the biscuits rise up and turn golden

An easy Italian style dinner is born!

You could tuck in some tortellini or macaroni if desired,

but I promise you won’t even miss the pasta~

Marinara Ricotta Meatball Bubble-up

Meatballs and biscuit dough are baked in a marinara ricotta sauce for an easy and delicious Italian style meal

Ingredients
  

  • 1 can 8 count, large biscuits like Pillsbury Grands
  • 1 cup ricotta cheese
  • 1 1/2 cups marinara sauce
  • 4 oz grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 16 1" meatballs* recipe in note below
  • garlic powder to taste
  • 2 Tbsp butter melted

Instructions
 

  • Combine the marinara sauce with the ricotta, Italian seasoning and 3 oz of Parmesan cheese
  • Spread in the bottom of a 8" x 8" casserole dish or deep dish pie pan that has been sprayed with cooking spray.
  • Place meatballs into sauce leaving spaces between them
  • Cut biscuits into 1/4s and put into a bowl
  • Combine garlic powder {as much or as little as you like} with melted butter and pour over biscuit pieces, tossing around gently to coat
  • Place biscuit pieces in between and around meatballs, pushing down into sauce.
  • Sprinkle remaining Parmesan over top of casserole
  • Bake uncovered for 20 minutes, and check for doneness. Continue to cook 5-10 minutes until meatballs and biscuits are cooked all the way through
  • Makes 2 large servings, 3 medium servings or 4 small servings

Notes

Easy meatballs:
1/2 lb. ground beef
1/2 lb. breakfast sausage
1/4 cup BBQ sauce
1 tsp Montreal Steak Seasoning
1 cup extra sharp grated cheddar
Combine ingredients and form into 1 inch balls.  Makes about 40. Use within 1-2 days or freeze.
