Throwback Thursday, Power Greens Salad with Butternut Squash Ravioli Croutons

Put a unique twist on your salad by serving it with ravioli croutons!

I call this a Power Greens Salad because it’s loaded

with healthy vegetables, dressed with peanuts

and tossed with a peanut lime dressing

I used a bag of kale salad mix to make prep super easy,

but you can also make your own mix with fresh kale,

shaved brussels sprouts, spinach, cabbage

bean sprouts and romaine

The delicious dressing is made with olive oil, Dijon mustard,

creamy peanut butter, maple syrup,

minced garlic or garlic powder, lime juice, salt & pepper

Use a jar to make the dressing in for easy mixing

and for keeping in the refrigerator

The fresh lime juice adds a little tang and spark

To make the “croutons” cook the ravioli as directed on the package

until just done, al dente

You can do this in advance and keep it in the refrigerator

for several days

I used butternut squash ravioli,

but you can use any kind you want

After ravioli are cooked, place desired number on a baking sheet

and top with Parmesan cheese

Broil for 2-3 minutes to melt cheese

Serve the ravioli whole or cut into quarters

When you’re ready to eat,

fill a bowl/s with the chopped kale and other power greens,

top with peanuts and drizzle with dressing*

*If dressing has been refrigerated,

bring to room temperature before using

Add warm or room temperature ravioli croutons

  9. Hi, Sandi. This really looks nummy, I want to have the ‘girls’ over for a lunch and this would be really excellent option for some of the nutritional issues! Nice to see you again, Sandi
