Sunday Supper, Chicken Alfredo Bubble Up with Mushrooms and Spinach

Now that it’s September,
I’ve been dreaming of the comforting foods of Fall,
hearty soups, crock pot meals and casseroles
One of the recipes on my September bucket list,
was the inspiration for this easy and amazing one dish meal

I changed it up, using chicken thighs, fresh mushrooms, spinach
and Alfredo sauce instead of cream soups

Instead of serving this with rice or pasta
I added biscuits during the last part of cooking
You won’t believe how incredibly easy this is!
First, quickly saute the mushrooms over medium high heat
until golden

Add spinach and stir, until it wilts down

Put chicken into a baking dish that is large enough to hold chicken
with extra space around it for the biscuit pieces
Put mushrooms and spinach on top of chicken

Pour Alfredo sauce over all

Bake at 300 degrees for 1 hour

Cut biscuits into quarters
and submerge the pieces in the sauce around the chicken
[They are hard to see because
they are the same color as the sauce]

Sprinkle Parmesan cheese all over the top

Turn the oven up to 350 degrees,
put the dish back in the oven and cook for 25-30 more minutes
until biscuits are golden

Serve it up!

This serves 2-3 depending on appetites~
HHjr had 2 thighs and I had one so this was perfect for us
Increase ingredient amounts as needed for more servings
Serve with a salad for a complete meal


Chicken Alfredo Bubble Up with Mushrooms & Spinach
Ingredients
- 3 boneless skinless chicken thighs*
- 4 oz sliced mushrooms
- 6 cups fresh baby spinach about 2 large handfuls
- salt and pepper
- 1 can 5 regular size biscuits
- 2 cups Alfredo sauce
- 3 oz shredded Parmesan cheese
Instructions
- Preheat oven to 300 degrees
- Saute mushrooms over medium high heat until golden Add spinach and stir until it wilts down and set pan aside
- Lightly spray or grease an 8″ x 8″ casserole
- Put chicken in dish and top with mushrooms and spinach. Season with salt pepper
- Cover with Alfredo
- Cover and refrigerate at this point before baking if desired
- Bake at 300 degrees for 1 hour and remove from oven
- Cut biscuits into 1/4s
- Add biscuit pieces around chicken and push down to submerge into sauce
- Sprinkle top with Parmesan
- Increase oven temp to 350 degrees and return casserole with biscuits to oven and bake for 25-30 more minutes, until biscuits are golden and cooked through in the center.

Adding biscuits is absolute genius! I am going to make this in the coming week. September does mean, comfort, food, and I have been thinking about casseroles, but in addition to that, I’ve been thinking about pot pies. I haven’t been much inclined to make pie crust, but I can certainly pop open a can of biscuits. Thanks for this, Jenna. I can’t wait to try it.
