Spinach & Artichoke Dip and Chicken Bubble Up~

Two favorites join together to make one special casserole!

Rotisserie chicken, fresh baby spinach, artichoke hearts, biscuits,

milk, chive and onion cream cheese, and Italian Cheese blend

come together for a very tasty one dish meal

My “chef” made rotisserie chicken the night before,

so I used the leftovers to make this casserole

You can use any cooked chicken,

or a rotisserie chicken from the grocery store

First put the chive and onion cream cheese and 1 cup Italian cheese blend

into large mixing bowl and cook in the microwave for 1 minute on high

Add milk and stir with a whisk to blend

Add chicken, artichokes, and spinach and stir to combine evenly

Season with a little black pepper if your chicken is not already seasoned

Stir in baby spinach

Turn out into a prepared 9″ x 9″ casserole dish

Cut the biscuits into 1/4s

Place them into the chicken mixture

Sprinkle with remaining cheese

The casserole can be covered and refrigerated

before baking later if desired

If you aren’t going to bake this in more than a few hours,

don’t add the biscuit pieces until right before baking

Bake at 350 degrees for 25-30 minutes

or until biscuits are cooked and casserole is hot

Serve and enjoy!

A crisp green salad is a good accompaniment

Two favorites, spinach and artichoke dip and chicken bubble up, join together to make one tasty casserole! Rotisserie chicken makes it easy to put together and you can make it up to 24 hours ahead before baking if desire. This is a delicious one dish meal

Equipment

  • 9" x 9" baking dish

Ingredients
  

  • 2 cups chopped or shredded cooked chicken
  • 1/2 cup milk
  • 6 oz. cream cheese with chives
  • 1/2 6 oz. bag baby spinach leaves
  • 1 1/4 cups shredded Italian cheese blend, divided
  • 1 can 5 regular size biscuits
  • 1 jar 7.5 oz. hearts, drained and chopped
  • black pepper to taste

Instructions
 

  • Put cream cheese and 1 cup Italian cheese blend into large mixing bowl and cook in the microwave for 1 minute on high.
  • Add milk and stir with a whisk to blend
  • Add chicken, artichokes, and spinach and stir to combine evenly
  • Transfer to a greased 9” x 9” baking dish
  • Cut biscuits into 1/4s and place down into chicken mixture*
  • Sprinkle with reserved cheese
  • Cover and refrigerate at this point for several hours if desired
  • Bake at 350 for 25 -35 minutes until biscuits are golden

Notes

*if you want to make this more than a few hours ahead of time, don’t add the biscuits until right before baking

    Ah Jenna. A great recipe for leftover chicken or even pulled chicken that they have at the grocery store. If it has cheese in it, I’m on it lol.
