Mother’s Day Menu Ideas

Happy Cinco de Mayo! Next Sunday is Mother’s Day~

are you going to celebrate?

Will you be cooking or will someone be cooking for you?

We will be celebrating a birthday and Mother’s Day next weekend

so I have been busy planning what we will have…

there will definitely be cake!

I picked out some special recipes from the archives

that your mom {or yourself!} can enjoy for Mother’s Day

For a special appetizer or small bite,

serve Cheesy Asparagus & Proscuitto Pastries

Puff pastry squares filled with asparagus and proscuitto

are little bites of heaven

Tomato Canapes with Bacon Aioli

are savory canapés with a creamy bacon and chives spread

and topped with grape tomatoes

These savory Chicken Cordon Bleu Cupcakes are made

with a biscuit bottom filled with chive cream cheese,

topped with a chicken nugget wrapped in ham

and covered with Swiss cheese

Ladies love salads, and these are sure to make them happy

Blueberry Orange and Almond Spinach Salad

Sweet mandarin oranges and blueberries

are paired with buttery almonds on a bed of spinach and romaine

Crazy Good Broccoli Salad is one of my very favorites,

it’s full of all kinds of goodies,

broccoli, red onion, grapes, pineapple, cheese, bacon, nuts

dressed with Greek yogurt

Tomato Salad Stack makes a wow presentation~

Thick slices of juicy heirloom tomatoes

with corn and peas in a chive dressing,

fried okra and cherry tomatoes,

all stacked and topped with crispy bacon,

balsamic vinaigrette, and basil chiffonade

A main dish salad would be a great choice too~

Turn a cheeseburger a into a wow salad

Loaded Cheeseburger Salad

Teriyaki Chicken Salad with Grilled Cheese Croutons

is tossed with a creamy orange vinaigrette

and will put a smile on anyone’s face!

Duke’s Parmesan Chicken Salad with Strawberries

is perfect for the warmer months

when strawberries are at their peak

If you want to have a main dish that’s not a salad

I recommend Blackened Shrimp with Basil Fettucini Alfredo

it’s pretty swoon worthy!

Chicken & Asparagus Timbales are puff pastry shells

filled with a creamy mix of chicken and asparagus~

like mini chicken pot pies dressed up for a party!

Gnocchi always feels a little fancy and special, how about

Gnocchi Florentine with Mushrooms & Pancetta

It wouldn’t be a celebration without a wonderful dessert

Top a bundt cake with a bouquet of fresh flowers~

When you’re ready to cut and serve the cake,

take the bouquet out and hand it to your special guest

Rose Topped Coconut Poke Cake

Strawberries and Cream Pretzel Salad is not actually a salad,

it’s an old Southern classic recipe

that was given to me by my MIL years ago

It’s a sweet creamy strawberry treat!

Amp up an ice cream sundae by turning it into an

Ice Cream Sunday Pie

  8. We’ve decided to skip the crowded restaurants on Mother’s Day and take my mother on a picnic by the bay. These recipes are perfect – and don’t you think I should forward them to my husband so he can do the cooking? – HOLD ON – I’m rolling on the floor. I fear I’ll get a sandwich from Subway if I don’t “help.” (Not that there’s anything wrong with that) – Happy Mother’s Day to you!
