Recipe Box, Peach Dumplings

Okay, so with my August Bucket List in mind,

I got 6 peaches from the grocery store,

planning to make Peach Bread

I set them out on the counter to continue ripening…

Later in the day

I saw my 12 year old grandson slicing one up for a snack~

No problem, I was happy he was enjoying it…

I went back into the kitchen an hour later and 2 more were gone!

They must really be good I thought…

That night I noticed my other grandson, Super Teen,

cutting one up to go with his dinner…

I thought, there are still 2 left…

but in the morning, they were gone!! No peaches for cooking!

So this recipe is from the archives,

and it’s so good it deserves a reread!

All you need is a roll of crescent roll dough,

2-3 peaches, almond extract, sugar and butter

Toss your peaches in boiling water for 45-60 seconds

to make quick work of removing the peel

It will slide right off

Cut peaches into large sections, about 1/4 of a peach

Separate dough triangles

and slather with almond emulsion* or almond extract

*emulsions do not have alcohol and therefore pack a little more flavor since the alcohol in extracts tends to evaporate during cooking

Wrap the peach section in a dough triangle

and place in a greased baking dish

Bring water, butter and sugar to a boil and cook for several minutes

Pour over dumplings in baking dish

Bake at 350 degrees F for 25 minutes until golden

Sprinkle liberally with sliced almonds after baking

Drizzle pan sauce over the dumplings when serving

You can serve them with a scoop of vanilla ice cream too

Peach Dumplings

Prep Time 10 minutes
Cook Time 25 minutes
Course Breakfast, Brunch, Dessert, Snack

Ingredients
  

  • 1 can crescent roll dough
  • 2-3 fresh ripe peaches [or use canned]
  • 1/2 cup vanilla sugar sugar or brown sugar*
  • 1 stick butter
  • 1/2 cup water
  • 8 tsp almond emulsion or extract
  • sliced almonds
  • 2 T sugar for topping

Instructions
 

  • Peel peaches [blanch in boiling water for easy peel removal] and cut into large sections, about 4 per peach.
  • Unroll dough and separate into triangles. Brush each triangle with a liberal tsp of almond flavoring.
  • Top with a peach section and enclose dough around peach.
  • Place rolls in a greased baking dish.
  • Boil water and add 1/2 cup sugar and butter. Cook for 2-3 minutes.
  • Pour over dumplings in dish.
  • Bake at 350 for 25 minutes, or until dough is cooked through and dumplings are golden. Top with sliced almonds. Serve warm with pan juices and/or vanilla ice cream. Makes 8 dumplings.

Notes

*vanilla sugar can be found at Whole Foods or specialty stores or you can make your own by placing a vanilla bean in a pint of sugar in a jar and letting it sit for a week. You can also use brown sugar or white sugar with a dash of vanilla extract thrown in the water.

    Jenna, I adore peaches. I can understand why your grands love them so much. We have an orchard close to us, and I visit weekly in the summer. They have varieties starting in late June that go all the way to September. They also sell the best peach ice cream and hand pies. Your peach dumpling recipe looks scrumptious!   6. Those look delightful! Same thing happens around here anytime there is fresh, local fruit in the house – peaches and apples. I have to buy extra so I have some for eating and more for baking.
