This recipe has been floating around for a long time but we hadn’t tried it and I wanted something easy and tasty to do with grilled chicken. After thinking about the recipe for a minute I decided to add a little white BBQ sauce to give it a little more attitude. This is a winner!
The only prep is a little marinating and whipping up some 1 minute sauce.
All you need is some Ranch Dressing Mix, oil, vinegar and CHICKEN of course! I chose bone in breasts, but you can use any pieces you like.
Rinse your chicken and put in a large ziplock bag
Make the Ranch marinade. I used 2 T of the dressing mix, which is the equivalent of 2 regular size packets of salad dressing mix.
Then mix in 4 T oil, I used Olive oil, but you can use any type you have. And 2 T vinegar, any kind and mix very well.
Pour into the bag with the chicken pieces, seal bag and toss around and try to coat pieces as evenly as possible. Refrigerate several hours or overnight. When ready to cook, grill or broil chicken normally until done, basting with Alabama White BBQ Sauce near the end of cooking time. Serve with additional sauce on the side.
Make the Alabama White Sauce with Mayonnaise, sugar, lemon juice, vinegar and salt. I used the same measuring cup that I mixed the Ranch marinade in because its all going to end up in the same place anyway! Just put everything in the measuring cup and mix thoroughly with a fork or whisk. Stick it in the fridge until cooking time. Use 1/2 of the sauce for basting and reserve remaining sauce for serving with the chicken.
Quarter your lemon peels and feed them to your garbage disposal. This will clean and deodorize it.
CONFESSION, Hungry Husband forgot to put the sauce on. Sigh…. BUT, it was delicious anyway! You could taste the tangy ranch dressing and the lemony creamy white sauce we served with it was the perfect compliment.
