Recipe Box, Maple Sausage & Waffle Bake

I made this for Hungry Husband for a special breakfast last week and it was AMAZING! It even tasted good 4 days later! I am a big fan of maple bacon so when I saw this over at plainchicken.com [where the recipes are always simple and delicious], I wanted to try this casserole with maple sausage. This would make a great casserole to gift to friends, you could deliver it cooked, uncooked, or partially baked with cooking instructions. It is perfect for brunch and holidays. You will think of excuses to make it!
I kicked the original recipe up a notch by using Julian’s Vanilla Belgian waffles, Michele’s Butter Pecan Syrup and sharp white cheddar…. sigh, there are no words…. you must taste!
Cut the waffles into 1-2″pieces
Brown the sausage and drain on paper towels
Toss waffle pieces and sausage into your casserole dish [that has been sprayed with cooking oil spray]
Then add 1/2 of the cheese
Beat eggs with milk and seasonings
Pour over all and then push waffles and everything down into the milk mixture to submerge. Cover with remaining cheese and refrigerate overnight before baking at 325 for 45-60 minutes. If you have any leftovers, just reheat in the microwave.
I bet you’re wondering where the finished dish photo is…here’s the thing…I forgot to take it!! Yikes, this smelled so good and everybody was so hungry we just dug in! Trust me, it looked sort of like a quiche does, the egg and milk cooked into the dish and is was a yummy golden concoction. A great change from the usual breakfast casserole, this will definitely make an appearance over the holidays!

You can make this recipe with your own waffles or Eggos, and any syrup BUT, it is really worth it to hunt these recommended yummy ingredients. Always use the best quality ingredients you can find or afford, this makes such a difference in the taste of your dish. Fresh is always better too. Date label your herbs and frozen dishes.
MAPLE SAUSAGE & BELGIAN WAFFLE BAKE
Ingredients
- 1 roll 16 oz maple sausage
- 6 Julian’s Vanilla Belgian Waffles
- 7 eggs
- 1 3/4 cups milk [not skim]
- 1 cup grated white cheddar divided
- 1/4 cup Michele’s Butter Pecan Syrup
- S & P
- 1/2 cup chopped pecans [optional]
Instructions
- Brown sausage and drain.
- Cut up waffles into 1 “ pieces.
- Beat eggs, add milk, syrup and season.
- Toss sausage, 1/2 cheese and waffle cubes together in a greased casserole and pour milk egg mix over all. Push down waffles to submerge and cover with remaining cheese.
- Refrigerate overnight then bake at 325 45-60 minutes.
- Serves 8-10
