The Organized Life, The May Paint Bucket

This month I have listed recipes to try from some of my favorite blogs, Stone Gable, Proud Italian Cook, and Home is where the boat is, along with lots of others…sometimes the recipes on my monthly list don’t fit into the menu plan as the month progresses, but it’s a great way to narrow down to  just a few the many recipes I always want to try.  By limiting my choices, I don’t feel overwhelmed with decisions nor do I spend lots of time searching for recipes.  Making a monthly list of recipes to try spurs “the old idea factory” and stretches me to try new things.

Here’s what I made from the April Paint Bucket.  My favorite recipe was ITALIAN FRIES, be sure to try this one!

CHICKEN PARMESAN, I didn’t post this because I didn’t think it was very good.  The recipe was on Pinterest and touted to be the best Parmesan Chicken EVER!   By a chef no less, Chef John…I read the recipe and it sure sounded good and oh so easy {one of my weaknesses!} So I had to give it a try…sometimes too good to be true is actually true! In this case it was too easy to be good!

This recipe could be made by a 5 year old, it is that easy! I think my biggest mistake was that I didn’t add any extra seasoning.  Everybody ate it {except me after 2 bites} but just because they were hungry.  Try it and see what you think~ I thought the chicken was rubbery, I think it needs a quick saute first.  I will say the croutons and cheese made a delicious topping.  I didn’t make this a printable because I haven’t perfected it yet.

CHICKEN PARMESAN

2 tbsp olive oil
2 cloves garlic, crushed
hot red pepper flakes, to taste
2 boneless skinless chicken breasts, cut into tenders, 3-4 pieces for each whole breast
1/4 cup chopped basil
8 oz mozzarella, shredded
4 oz Parmesan, grated
1 (5-oz) package garlic croutons

Put olive oil in baking dish and swirl in crushed garlie and season with red pepper.  Lay chicken on top and top with 2 cups marinara.  Top sauce with fresh snipped basil, then top that with 1/2 of the cheeses.  Top with croutons then remaining cheese.  Bake 350 for 35 min  Serves 4.
