Here are some more great recipes for tailgating and fall football.  These are a little more complicated than yesterday’s Fast & Fabulous, but they aren’t hard and they are so different from the usual fare, you might want to give them a try~

These are some of the show stopping recipes from the recent “Cook your App Off!” party.  These recipes wowed guests with presentation and flavor!

ASIAN FIRECRACKERS, these are like a popper inside a wonton, and this recipe is the 2012 “Cook Your App Off” Winner.  You can see this years winning recipe, Artichoke Mystery Biteshere

SWEET POTATO STACKS  from Southern Living, are a delightful change from the usual potato skins, and perfect for fall, as an appetizer or a side dish.

LAMB SLIDERS with MINT JELLY SAUCE & ROSEMARY, these are an unexpected flavor twist on sliders and picky eaters will never know it’s lamb not beef, they will just rave about the unique flavors!

ASIAN FIRECRACKERS

Course Appetizer
Cuisine American, Asian
Servings 30 wontons

Ingredients
  

  • 1 pkg wonton wrappers
  • 1 lb. pork sausage
  • 8 oz light cream cheese
  • 4 oz. diced green chiles, drained well, or use chopped fresh jalapenos
  • 1 fresh pineapple
  • 2 jars La Choy sweet and sour sauce

Instructions
 

  • Cook sausage, drain and crumble.
  • Combine with cream cheese and green chiles.
  • Place about one Tablespoon of filling off center of wrapper.
  • Wet edges of wrapper with your finger and cool water. Fold into a triangle and push edges together to seal. Fold corners up and over filling mound forming wonton shape.
  • Deep fry 2-3 minutes until golden.
  • Remove top of pineapple, about half way down.
  • Remove center from bottom half of pineapple, reserving good pineapple meat, and make the pineapple into a bowl.
  • Chop up some of the fresh pineapple into a small dice and combine with sweet and sour sauce.
  • Heat over low heat, stirring, to warm. Pour sauce into prepared pineapple bowl and serve with hot wontons. Makes about 30

SWEET POTATO STACKS

Cook Time 30 minutes
Course Appetizer, Side Dish

Equipment

  • muffin tin

Ingredients
  

  • 1 1/2 pounds small sweet potatoes peeled and thinly sliced
  • 2 teaspoons chopped fresh thyme divided
  • 1 cup 4 oz. freshly shredded mozzarella cheese, divided*
  • 2/3 cup heavy cream
  • 1 garlic clove pressed
  • 1/2 tsp. salt
  • 1/4 teaspoon freshly ground pepper
  • Garnish: fresh thyme

Instructions
 

  • Preheat oven to 375°. Layer half of sweet potatoes in a lightly greased 12-cup muffin pan.
  • Sprinkle with 1 1/2 tsp. thyme and 1/2 cup cheese.
  • Top with remaining sweet potatoes. (Potatoes will come slightly above the rim of each cup.)
  • Microwave cream, next 3 ingredients, and remaining 1/2 tsp. thyme at HIGH 1 minute.
  • Pour cream mixture into muffin cups (about 1 Tbsp. per cup).
  • Bake at 375°, covered with aluminum foil, 30 minutes.
  • Uncover and sprinkle with remaining 1/2 cup cheese. Bake 5 to 7 minutes or until cheese is melted and slightly golden.
  • Let stand 5 minutes. Run a sharp knife around rim of each cup, and lift potato stacks from cups using a spoon or thin spatula. Transfer to a serving platter. Garnish, if desired.  *Gruyère cheese may be substituted.

LAMB SLIDERS  with MINT JELLY PEPPER SAUCE

a delicious twist on hamburger sliders, these are made with ground lamb and topped with an Asian mint sauce
Prep Time 15 minutes
Cook Time 15 minutes
Course Appetizer, Cook out, Main Course
Cuisine American, Asian
Servings 8 sliders

Ingredients
  

  • 1 1/2 lbs. ground lamb
  • 1/2 jar pepper jelly
  • fresh mint leaves
  • fresh rosemary
  • 1/2 cup soy sauce divided
  • S&P
  • 8 slider buns

Instructions
 

  • Make a sauce with pepper jelly and some soy sauce, until it’s spreadable but not too liquid.
  • Add mint and rosemary to taste.  Don’t let the rosemary dominate the flavor, just a touch.
  • Add 2-4 T of soy sauce to lamb and season with S&P.  Form into 8 slider patties.
  • Grill patties and serve on buns slathered with Mint Jelly Pepper Sauce.  Garnish with a fresh rosemary sprig and mint leaves.  Makes 8 sliders

NOTE:  The lamb sliders and the wontons are original recipes from my son, HHjr, who is a great cook and creative chef.  The amounts of ingredients are approximate, he sort of makes up as he goes, so it’s hard to pin him down to exact measurements.  As with any recipe, you need to taste along the way to adjust the recipe to your preference.

  1. My mouth is completely watering Jenna! All look so good! Might need to start with the sweet potato stacks first since I have a few sweet potatoes that I need to use up. 🙂 But those Asian Firecrackers are seriously calling my name!

    Winning Appetizers indeed Jenna! I love the idea of a Cook Your App Off Party! I’d love to sink my teeth in a Asian Firecracker and a Sweet Potato Stack right now. I’d say the apple didn’t fall far from the tree with you son’s culinary creativity in the kitchen!

    The sweet potato stacks look absolutely yummy. I am always looking for sweet potato recipes that do not use sugar and/or honey to make them even sweeter. This recipes looks savory, and I definitely want to try it.
