Recipe Box, Salsa Bread

Are you superstitious?  You know, about Friday the 13th?  No worries!  Today is your lucky day!

You probably have your own version of this and I have mentioned Salsa Bread before, but it’s so good and so easy, I just want to make sure you know about this great side or party dish!  Just in time for football parties, this is one of our family’s favorites and we recently made it over our Laborless Day weekend

I never have enough time to take pictures of this dish because it goes so fast!  Men will hover! Don’t turn your back for a second!

The base is Pillsbury Grands biscuits cut into 1/8s.  You can stack 2-3 and slice all at once

Then put the biscuit pieces in a cooking oil sprayed dish, a 9 x 13 works perfectly for 1 can of biscuits.  Leave a little space between them, they will expand.

Add your favorite salsa, I usually use about 1 cup.  You don’t want to overload it because “your biscuits won’t rise, sugah!”

Add cheese and toss it around until it looks sort of like this…

Bake at 375 for about 25 minutes, checking towards the end, until the biscuits are done

Add more cheese and return to oven for 2 minutes, just to melt.

You can also add green onions or black olives before baking

Or make it a heartier dish with black beans, corn, taco meat or all of the above!

1 can Pillsbury Grands biscuit dough
4-5 green onions, chopped
1 cup salsa
lots of grated cheddar cheese

Cut biscuits into 1/8ths.  Put biscuit pieces into a greased 9 x 13 baking dish, in one layer, leaving some spaces.  Toss with green onions and salsa,  covering dough but not drenching it.  Toss in some cheese, reserve additional cheese for topping at the end.  Bake at 375 for 20-25 minutes until biscuits are done and golden.  Top with additional cheese and return to oven just to melt.
4-6 servings
