Recipe Box, Zucchini Noodles with Pesto, Pistachio and Pine Nuts

Zucchini is one of my favorite vegetables
and this just might be my favorite way to prepare it
A spiral vegetable slicer makes quick work of making “zoodles,” you know zucchini noodles
You might want to cut some of the long ones 🙂
Put them on a cooking oil sprayed, foil lined baking sheet
Halve some cherry tomatoes and toss everything with a little pesto
Use your fingers to distribute the pesto ✋
Roast at 400-425 degrees for 15- 20 minutes until zucchini is soft and tomatoes have burst
Add nuts and Parmesan and return to oven just to melt cheese, 2 minutes
Get ready to enjoy!

Zucchini Noodles with Pesto, Pistachio and Pine Nuts
Ingredients
- 2 large zucchini
- 1/4 cup pesto
- 1/4-1/2 cup toasted pine nuts
- 1/4-1/2 cup roasted and salted shelled pistachio nuts
- 10-12 cherry tomatoes cut in half
- 2 oz shaved Parmesan
- olive oil
- salt and pepper
Instructions
- Cut zucchini into ribbons with a spiralizer*
- Line a baking sheet with foil and spray with cooking oil spray.
- Put noodles on foil and add tomatoes. Season with salt and pepper.
- Drop small spoonfuls of pesto over vegetables and use your fingers to toss vegetables with the pesto to evenly distribute.
- Bake at 400-425 for 15-20 minutes, or until vegetables look done.
- Remove from oven and toss nuts in and sprinkle cheese over all. Return to oven 1-2 minutes to warm nuts and melt cheese. Serve immediately. Makes 2 main dish servings or 3-4 side dish servings.

Serve this as a light main dish or as a side dish
We had this as a side dish with Ribeyes and Steak House Fries with Garlic and Parsley which will be posting next week~
You will never want fried potatoes again after you try these roasted beauties!

ha, yes, several zoodles got really long!
I have to try this Jenna! I made an arugula pesto with pistachios before and have only played around with a wee hand-held version of a spiralizer. I love that this bakes in the oven rather than a pan too!
